Description

This potato chicken salad is a real filler and perfect for warm days or a barbecue party. The combination of creamy sauce, hearty chicken and fresh vegetables makes it an absolute highlight. I like to make it when I have guests because it is great to prepare and always goes down well. The potatoes provide a pleasant satiety, while the chicken provides a decent portion of protein. If you like it a little lighter, you can prepare the sauce with yogurt instead of crème fraîche. A great recipe that is simply fun!

Ingredients (14 ingredients)

  • 6 piece medium-sized boiled potatoes, cooked, sliced
  • 1 container Crème fraîche with herbs
  • 1 tbsp Vinegar
  • 1 tbsp Tomato paste
  • 1 can Corn
  • 1 can Kidney beans
  • 500 g Chicken breast
  • 0.5 Flasche Sauce Barbecue-
  • 4 tbsp Milk
  • 0.5 piece Cucumber(s)
  • 1 pinch Pepper
  • 1 pinch Salt
  • 4 tbsp Oil for frying
  • 1 piece medium-sized Onion(s)

Preparation (6 steps)

Chop onion

Peel, quarter and place the onion in the mixing bowl. Chop 3 sec./level 5.

Sauté the onion

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 2 tbsp oil to the onions in the mixing bowl and sauté 3 min./120°C/level 1.

Prepare sauce

Thermomix® Setting
20 sec/Speed 3

Add crème fraîche, tomato paste, vinegar, milk, salt and pepper to the mixing bowl and stir 20 sec./level 3.

Mix salad

Pour the sauce from the mixing bowl into a large bowl. Add the cooked potato slices, the cucumber cut into pieces, the sautéed onions, the corn and the kidney beans. Mix everything carefully.

Fry chicken

Cut the chicken into bite-sized pieces and marinate in barbecue sauce. Fry in a pan with 2 tbsp oil until cooked.

Add chicken to salad

Add the fried chicken to the salad in the bowl and carefully fold in. Let the salad steep well and season before serving.
