Description

This spinach tomato casserole is a wonderfully hearty dish that I particularly like to prepare when I need something quick. The fresh spinach and juicy tomatoes harmonize perfectly with the creamy sour cream sauce. The pine nuts give the casserole a nice crunch. I think it's ideal for a quick lunch or a light dinner. And the best part: it's super easy to prepare and the whole family will love it! If you like, you can add some grated cheese over the casserole.

Ingredients (12 ingredients)

  • 1 kg Leaf spinach
  • 0.01 pinch Salt
  • 2 piece Eggs (size M)
  • 1 clove Garlic
  • 250 g Sour cream
  • 200 ml Milk
  • 2 tbsp Semolina
  • 2 tbsp Grated Parmesan
  • 0.01 pinch Black pepper
  • 0.01 pinch Grated nutmeg
  • 250 g Tomatoes
  • 40 g Pine nuts

Preparation (7 steps)

Prepare spinach

Clean and wash the leaf spinach and briefly blanch in boiling salted water. Then drain well in a sieve.

Chop garlic

Peel the garlic clove and add to the mixing bowl. Chop for 3 sec./speed 7.

Prepare sour cream sauce

Separate the eggs. Add the egg yolks, chopped garlic, sour cream, milk, semolina and grated cheese to the mixing bowl. Season with salt, pepper and nutmeg and mix for 20 sec./speed 3.

Whisk egg whites

Thermomix® Setting
3 min/Speed 3.5

Add the egg whites with the butterfly to the mixing bowl and whisk until stiff for 3 min./speed 3.5.

Fold in egg whites

Carefully fold the stiffly beaten egg whites into the sour cream sauce.

Layer casserole

Wash the tomatoes and cut into slices. Grease a casserole dish (approx. 28 cm long). Layer spinach, tomato slices and sour cream sauce alternately in the casserole dish. Sprinkle with pine nuts.

Bake casserole

Bake the casserole in a preheated oven (electric oven: 225 °C/ convection oven: 200 °C/gas: level 4) for approx. 20 minutes until golden brown.
