Description

Hunter's style lamb is a classic of Roman cuisine, a dish rich in flavor and aromas that evokes the culinary traditions of the countryside. Prepared with tender lamb, white wine, aromatic herbs and a touch of broth, this dish is perfect for a Sunday family lunch or a dinner with friends. The meat, browned and then cooked slowly, becomes incredibly soft and juicy, while the sauce is enriched with the aromas of rosemary, sage and bay leaf. A real comfort food that warms the heart and delights the palate. I often prepare it, especially in autumn, when the scents of the earth become more intense. Serve it with polenta or baked potatoes for a complete and satisfying meal.

Ingredients (10 ingredients)

  • 800 g Suckling lamb
  • 4 tbsp Extra virgin olive oil
  • 50 ml White wine vinegar
  • 2 clove Garlic
  • 1 rametto Rosemary
  • 3 foglia Sage
  • 2 foglia Bay leaf
  • 200 ml Meat broth
  • 1 tsp Salt
  • 1 pinch Black pepper

Preparation (5 steps)

Aromas in the jug

Thermomix® Setting

2 cloves of garlic in the jug and chop for 3 Sec./Speed 7.

Sauté the aromas

Add 4 tablespoons of extra virgin olive oil, 1 sprig of rosemary, 3 sage leaves and 2 bay leaves to the jug and sauté for 3 Min./120°C/Speed 1.

Brown the lamb

In a large pan, brown the chopped lamb with a drizzle of extra virgin olive oil over medium heat until golden brown. Remove the lamb from the pan and set aside.

Deglaze with vinegar

Thermomix® Setting
2 min/Varoma/Speed 1 Varoma

Pour 50 ml of white wine vinegar into the jug and cook for 2 Min./Varoma/Speed 1 without the measuring cup to evaporate the alcohol.

Lamb cooking

60 min/212°F/Linkslauf Speed 1 100 Reverse

Add the browned lamb to the jug, 1 teaspoon of salt, 1 pinch of black pepper and 200 ml of meat broth. Cook for 60 Min./100°C/Reverse rotation Speed 1. Check the cooking and add more broth if necessary.
