Description

These burger buns are simply heavenly! I always bake them when we make burgers, and they are a complete success every time. Thanks to the brioche style, they are particularly fluffy and get a great crust. The preparation is a bit time-consuming, but it's definitely worth it. They taste best fresh from the oven, but they can also be frozen well. Try it out, you will be thrilled! Perfect for the next barbecue or just for Sunday brunch.

Ingredients (11 ingredients)

  • 200 ml Lukewarm Water
  • 4 tbsp Milk
  • 1 cube Fresh Yeast
  • 35 g Sugar
  • 8 g Salt
  • 80 g Soft Butter
  • 500 g Wheat Flour Type 550
  • 1 piece Egg(s)
  • to taste Flour for the work surface and the hands
  • 2 tbsp Milk
  • 2 tbsp Water

Preparation (7 steps)

Prepare yeast

Thermomix® Setting
2 min/99°F/Speed 2 + 5 min/99°F/Speed 2 37

Add 200 ml warm water, 4 tbsp milk and 35 g sugar to the mixing bowl and heat for 2 min./37°C/speed 2. Crumble in 1 cube of fresh yeast and let rise for 5 min./37°C/speed 2.

Prepare dough

Thermomix® Setting
3 min/Kneading speed

Add 500 g wheat flour type 550, 8 g salt, 80 g soft butter and 1 egg to the mixing bowl and knead for 3 min./kneading level to a smooth dough.

Let the dough rise

Transfer the dough to a bowl, cover and let rise in a warm place for about 1 hour until it has clearly increased in volume.

Shape buns

Place the dough on a floured work surface and divide into 10 equal pieces (approx. 90 g per piece). Roll each piece into a ball in the floured palms of your hands and press into a flat disc with a diameter of 8 – 9 cm on a baking tray lined with baking paper.

Let the dough pieces rise

Cover the shaped dough pieces and let rise again for 1 hour.

Brush buns

Whisk 1 egg, 2 tbsp water and 2 tbsp milk in a small bowl. After the proofing time, brush the buns with it and sprinkle with sesame seeds.

Bake buns

Bake the buns in a preheated oven at 200°C top/bottom heat for approx. 16 - 20 minutes until the surface is golden brown. Remove from the oven and let cool on a wire rack.
