Description

Almond caramel cookies from the Thermomix® are a delicious finger food or dessert, ideal for the Christmas season. The main ingredients are flour, sugar, almonds and honey, which create a fine caramel taste. The preparation takes a total of 120 minutes, the active working time is about 45 minutes. The recipe yields approx. 30 cookies and is perfect for the winter coffee table or as Christmas pastries.

Ingredients (11 ingredients)

  • 150 g Flour
  • 150 g Sugar
  • 1 Päckchen Vanilla sugar
  • 1 Prise Iodized salt
  • 1 Stück Egg white
  • 125 g Margarine
  • 25 g Candied cherries (baking shelf)
  • 1 EL Liquid honey
  • 6 EL Whipping cream
  • 200 g Almonds (flaked)
  • 50 g Couverture

Preparation (9 steps)

Prepare dough

Thermomix® Setting
10 sec/Speed 4, 2 min/Kneading speed

Put 150 g flour, 50 g sugar, 1 packet of vanilla sugar and 1 pinch of iodized salt into the mixing bowl and mix for 10 sec/speed 4. Separate the egg, the egg yolk is not needed. Add egg white and 75 g margarine and knead for 2 min/kneading stage to a smooth dough. Wrap the dough in cling film and refrigerate for 1 hour.

Preheat oven and cut out dough

Preheat the oven to 195 °C (convection: 175 °C). Remove the dough from the refrigerator and roll out on a lightly floured work surface. Cut out circles with a glass or cutter (Ø approx. 5 cm) and place on baking sheets lined with baking paper.

Pre-bake cookies

Bake the cut-out dough circles in the preheated oven for approx. 5 minutes. Remove, but keep the oven at the same temperature.

Chop cherries

Thermomix® Setting
3 sec/Speed 5

Put 25 g of candied cherries into the mixing bowl and chop for 3 sec/speed 5. Transfer and set aside.

Prepare caramel

Thermomix® Setting
5 min/176°F/Speed 2 80

Put 50 g margarine, 1 tbsp honey and 100 g sugar into the mixing bowl and melt for 5 min/80°C/speed 2 until the mixture browns slightly. Use a spatula to push the ingredients down from the edge.

Add cream and almonds

Thermomix® Setting
2 min/176°F/Speed 2, 3 min/176°F/Linkslauf Speed 1 80 Reverse

Add 6 tbsp whipping cream and stir in for 2 min/80°C/speed 2. Add 200 g flaked almonds and the chopped cherries and stir in for 3 min/80°C/reverse rotation speed 1.

Top and bake Florentines

Place the almond caramel mixture as mounds on the pre-baked cookies. Bake the topped Florentines in the oven for 7-10 minutes until golden brown.

Let cool

Remove the finished Florentines from the oven and let them cool completely on a wire rack.

Melt couverture (optional)

Thermomix® Setting
3 min/122°F/Speed 1 50

If you like, you can drizzle some dark couverture over the Florentines: To do this, put 50 g couverture in the mixing bowl and melt for 3 min/50°C/speed 1. Pour over the Florentines and let dry.
