Description

Almond vanilla crescent cookies are a delicious low-carb Christmas pastry, prepared in the Thermomix®. The main ingredients are almonds, butter, vanilla and Stevia. With a preparation time of 90 minutes, about 30 gluten-free crescent cookies are created. Ideal as a Christmas dessert or finger food for the whole family.

Ingredients (6 ingredients)

  • 0.5 piece Vanilla bean
  • 200 g Ground almonds
  • 100 g Butter
  • 30 g Stevia sprinkle sweetener
  • 2 piece Egg yolk
  • 1 Msp. Baking powder

Prepare the dough

Thermomix® Setting

Put the pulp of half a vanilla bean, 200 g ground almonds, 100 g butter, 30 g Stevia sprinkle sweetener, 2 egg yolks and 1 pinch of baking powder into the mixing bowl and knead for 2 min./kneading setting to a smooth dough.

Shape and cool the dough

Remove the dough from the mixing bowl, form into two rolls and wrap in cling film and place in the refrigerator for one hour.

Preheat oven

Preheat the oven to 170 °C top/bottom heat. Line a baking tray with baking paper.

Shape and bake crescent cookies

Cut approx. 1 cm thick slices from the dough rolls and shape into crescent cookies. Place on the prepared baking tray with some space in between and bake for approx. 8 minutes.

Let the crescent cookies cool

Remove the baked crescent cookies from the oven and let them cool completely on the baking tray. Then carefully remove from the baking paper and store airtight until consumption.
