Description

These almond waffles with egg liqueur cream are an absolute highlight at every Easter brunch! I have been making them for years and they are always a hit. The waffles are nice and crispy and the egg liqueur cream makes them particularly juicy and creamy. The combination of almonds and egg liqueur is simply unbeatable. The fresh raspberries provide a fruity note. A truly festive dessert that is also easy to prepare. Perfect for those who like something a little more special!

Ingredients (14 ingredients)

  • 125 g Butter or margarine
  • 50 g Sugar
  • 2 Pck. Vanilla sugar
  • 2 piece Eggs (size M)
  • 175 g Flour
  • 1 tsp Baking powder
  • 75 g Ground almonds
  • 0.25 l Milk
  • 2 tbsp Flaked almonds
  • 250 g Whipping cream
  • 1 Pck. Cream stiffener
  • 0.1 l Egg liqueur
  • 200 g Raspberries
  • 1 tbsp Icing sugar

Preparation (8 steps)

Whisk butter, sugar and vanilla sugar until fluffy

Thermomix® Setting
2 min/Speed 4

Put 125 g butter or margarine, 50 g sugar and 1 packet of vanilla sugar into the mixing bowl and whisk for 2 min./speed 4 until fluffy.

Stir in eggs

Thermomix® Setting
30 sec/Speed 3

Add 2 eggs (size M) one after the other to the mixing bowl and stir in for 30 sec./speed 3.

Stir in flour mixture and milk

Thermomix® Setting
1 min/Speed 3

Put 175 g flour, 1 tsp baking powder and 75 g ground almonds into the mixing bowl. Add ¼ l milk and stir in for 1 min./speed 3.

Bake waffles

Pour a small ladle of batter into a hot, greased waffle iron and bake approx. 9 golden brown waffles one after the other. Do NOT perform this step in the Thermomix.

Roast flaked almonds

Roast 2-3 tbsp flaked almonds in a dry pan until golden brown. Do NOT perform this step in the Thermomix.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Put 250 g whipping cream, 1 packet of cream stiffener and the remaining vanilla sugar into the mixing bowl. Insert butterfly and whisk for 2 min./speed 3.5 until stiff. Add the ingredients through the lid opening.

Stir in egg liqueur

Thermomix® Setting
10 sec/Speed 2

Add 4-5 tablespoons of egg liqueur to the mixing bowl and stir in for 10 sec./speed 2. Remove butterfly.

Arrange

Pick over the raspberries. Dust warm waffles with approx. 1 tbsp icing sugar and arrange with cream, raspberries and flaked almonds. Drizzle with remaining egg liqueur and serve. Do NOT perform this step in the Thermomix.
