Description

This dish of stewed white beans with chorizo is a comforting classic, perfect for cold days. Pinto beans, slow-cooked with chorizo and a sauce of onion and paprika, create a tasty and nutritious stew. I always leave the beans soaking the night before so that they are more tender. The smoky touch of the chorizo gives it a special flavor. It is an ideal dish to share with the family or to enjoy alone on a winter afternoon. A spoonful dish that will warm your soul!

Ingredients (7 ingredients)

  • 6 piece Small fresh chorizo
  • 200 g Pinto beans
  • 1 piece Onion
  • Sweet paprika
  • Extra virgin olive oil
  • Salt
  • Water

Preparation of the beans

Put the pinto beans (200 g) in a container and cover them with cold water. Leave to soak overnight or at least during the morning if they are going to be cooked at night. This step is crucial to rehydrate the beans.

Initial cooking of the beans

Pour the soaked beans into the Thermomix glass and cover them with cold water. Make sure the water covers the beans completely. Program 20 Min./100°C/Speed 1.

Preparation of the sauce

Add the onion (1 unit) cut into quarters to the Thermomix glass. Program 3 Seg./Speed 5 to chop the onion. Lower the remains from the walls of the glass with the spatula.

Sauce of the onion

Thermomix® Setting
3 min/248°F/Velocidad 1 120

Add extra virgin olive oil (quantity to taste) to the Thermomix glass. Program 3 Min./120°C/Speed 1 to sauté the onion.

Add paprika

Add sweet paprika (quantity to taste) to the Thermomix glass and mix for 5 Seg./Speed 3.

Final cooking with chorizo

20 min/212°F/Velocidad 1 100

Add the sauce to the Thermomix glass with the previously cooked beans. Incorporate the small fresh chorizo (6 units) cut into slices. Cover with cold water, making sure that the water exceeds the beans by a couple of fingers. Add salt (quantity to taste). Program 20 Min./100°C/Speed 1.
