Description

These pineapple cream cheese omelets are a real eye-catcher on any coffee table! The combination of airy omelet, creamy cream cheese cream and fruity pineapple is simply irresistible. I especially like to make them in the summer, when the pineapple is particularly juicy. The preparation is a bit more complex, but the result is worth it. Perfect for a special brunch or as a sweet surprise for a birthday. If you like it a little lighter, you can replace the cream with yogurt.

Ingredients (13 ingredients)

  • 3 piece Eggs (size M)
  • 75 g Sugar
  • 2 Pck. Vanilla sugar
  • 1 piece grated zest of 1 untreated Lemon
  • 40 g Flour
  • 10 g Cornstarch
  • 200 g Cream cheese
  • 2 tbsp Pineapple juice
  • 250 g Whipping cream
  • 1 Pck. Cream stiffener
  • 3 Scheiben Pineapple (from can)
  • 1 tbsp Powdered sugar
  • Mint for decoration

Preparation (9 steps)

Separate eggs and whisk egg whites until stiff

Separate eggs. Place egg whites in the mixing bowl and whisk with the butterfly 3 min./speed 3.5 until stiff. Gradually add 50 g sugar and 1 packet of vanilla sugar. Transfer and set aside.

Stir egg yolks

Thermomix® Setting
20 sec/Speed 3

Place egg yolks in the mixing bowl and stir for 20 sec./speed 3. Add lemon zest and stir for another 10 sec./speed 3.

Fold in flour and starch

Sift flour and starch onto the egg white mixture and carefully fold in. Perform this step without Thermomix.

Bake omelet circles

Draw 6 circles (10-12 cm Ø) on a baking sheet lined with baking paper and spread the batter into the circles with a tablespoon. Bake in a preheated oven (electric oven: 200 °C/ gas: level 3) for 10-12 minutes. Remove the omelets from the oven and remove them from the baking sheet immediately. Fold over an object (e.g. rolling pin, cardboard roll or crumpled aluminum foil) and let cool. Perform this step without Thermomix.

Prepare cream cheese cream

Thermomix® Setting
20 sec/Speed 4

Place cream cheese, pineapple juice, remaining vanilla sugar and sugar in the mixing bowl and stir for 20 sec./speed 4.

Whip cream until stiff

Thermomix® Setting
2 min/Speed 3.5

Place whipping cream and cream stiffener in the mixing bowl and whisk with the butterfly for 2 min./speed 3.5 until stiff. Observe the consistency.

Fold in cream

Stir the cream in portions into the cream cheese cream. Perform this step without Thermomix.

Prepare pineapple

Cut the pineapple slices into small pieces. Perform this step without Thermomix.

Fill and decorate omelets

Fill cream cheese cream into a piping bag with a star nozzle and inject into the cooled omelets. Gently press pineapple pieces into the injected mass. Dust omelets with powdered sugar and serve decorated with mint as desired. Perform this step without Thermomix.
