Description

These stuffed anchovy rolls are a delicious Mediterranean treat! I often make them as a small appetizer or as part of a tapas buffet. The combination of salty anchovies, creamy feta and spicy olives is simply irresistible. The preparation is super easy and quick, perfect if you get unexpected guests. You can also prepare the rolls well and bake them in the oven just before serving. An absolute favorite recipe that always goes down well! They taste particularly delicious in summer when you can get fresh anchovies.

Ingredients (5 ingredients)

  • 200 g Fresh Anchovies or Anchovies
  • 150 g Feta
  • 50 g Black Olives
  • 50 g Spring Onions
  • 2 tbsp Extra Virgin Olive Oil (EVO)

Preparation (5 steps)

Chopped spring onions and olives

Thermomix® Setting

Add spring onions and black olives to the mixing bowl and chop finely. Chop 50g spring onions and 50g black olives in the mixing bowl for 5 sec./speed 5. Scrape down with the spatula.

Feta, spring onions and olives mixed together

Add 150g Feta, the chopped spring onion and olives from the mixing bowl into a large bowl and mix well until a homogeneous mixture is obtained. Make sure all ingredients are well mixed.

Stuffed Anchovies

Stuff the anchovies (200g) with the feta and olive mixture just made. Do not overdo the amount, this should be enough to stuff but should remain inside the anchovy roll.

Rolled and fixed rolls

Roll up the anchovy well so that it can contain the filling inside and secure the roll with a toothpick.

Baked rolls

Transfer the rolls to a baking tray lined with a sheet of parchment paper lightly greased with extra virgin olive oil. Also grease the surface of the rolls with more extra virgin oil and bake everything for 5 minutes at 190°C. Just enough time for the feta to melt slightly.
