Description

This Andalusian spinach with egg recipe is a simple and nutritious dish, perfect for a quick and comforting meal. Spinach, rich in vitamins and minerals, is combined with the flavor of garlic, onion and a touch of cumin, creating an explosion of Mediterranean flavor. The addition of the egg gives it a creamy and protein-rich touch that makes it a complete dish. I usually prepare it when I need a quick and healthy meal, and it is always a success! In addition, it is a very economical recipe and can be easily adapted to the ingredients you have at home. Ideal for a light dinner or a nutritious lunch.

Ingredients (13 ingredients)

  • 500 gramo frozen spinach
  • 3 slice bread
  • 3 clove garlic
  • 1 piece onion
  • 2 piece eggs
  • 1 container water
  • 1 pastilla concentrated poultry stock
  • 1 pinch salt
  • 1 pinch cumin
  • 1 pinch food coloring
  • 1 hoja bay leaf
  • Extra virgin olive oil
  • vinegar

Preparation (6 steps)

Prepare the sofrito

Thermomix® Setting
3 min/248°F/Speed 1 120

Peel the onion and cut it into quarters. Place it in the Thermomix bowl and chop for 3 seconds at speed 5. Add extra virgin olive oil and sauté for 3 minutes at 120°C at speed 1.

Add the spinach

Thermomix® Setting
10 min/212°F/Speed 1 100 Reverse

Add the frozen spinach to the Thermomix bowl along with a splash of vinegar. Program 10 minutes at 100°C at speed 1 with left turn.

Prepare the chopped mixture

While the spinach is cooking, fry 2 whole garlic cloves and 3 slices of bread in a pan with extra virgin olive oil. Reserve. In a mortar, crush 1 raw garlic clove with a pinch of salt. Add the fried garlic and the fried bread. Crush everything well. Add a glass of water and mix.

Add the chopped mixture and spices

5 min/212°F/Speed 1 100 Reverse

Pour the chopped mixture into the Thermomix bowl. Add the bay leaf, a pinch of salt, a pinch of cumin, a pinch of food coloring and a tablet of concentrated poultry stock. Program 5 minutes at 100°C at speed 1 with left turn.

Add the eggs

2 min/194°F/Speed 1 90 Reverse

Crack the eggs directly over the spinach in the Thermomix bowl. Program 2 minutes at 90°C at speed 1 with left turn. Gently stir with the spatula to integrate the eggs.

Serve

Serve the stewed spinach with freshly made egg. Accompany with slices of bread.
