Description

This Andean beetroot and vegetable salad is an explosion of color and flavor, perfect to accompany your Christmas celebrations or any special meal. The combination of the sweetness of the beetroot with the softness of the potatoes and carrots, together with the fresh touch of the corn and peas, make it irresistible. I always prepare it at Christmas, and there is never anything left over! Also, it is very easy to make with the Thermomix®, which saves me a lot of time in the kitchen. The homemade mayonnaise gives it a creamy touch and the lemon a point of acidity that balances all the flavors. Go ahead and try it, you will love it!

Ingredients (8 ingredients)

  • 3 piece white potatoes
  • 3 piece carrots
  • 3 piece beetroots
  • 2 piece corns
  • 100 g peas
  • mayonnaise
  • salt
  • 1 piece lemon

Cooking the vegetables

Thermomix® Setting
25 min/212°F/Velocidad 1 100

Place the white potatoes (3 units), the carrots (3 units) and the beetroots (3 units) in the Thermomix glass. Add cold water to cover the vegetables. Program 25 Min./100°C/Speed 1.

Preparation of the potatoes and carrots

Remove the potatoes from the Thermomix glass and let cool for a few minutes. Peel and cut into medium cubes of approximately 3 cm. Peel the carrots while they are still hot and chop them into cubes of the same size or a little smaller. Reserve in a bowl.

Preparation of the beetroots

Remove the beetroots from the Thermomix glass and, while they are still hot, peel and cut them into cubes of the same size as the potatoes or a little smaller. Add to the bowl with the potatoes and carrots.

Blanching the peas

Thermomix® Setting
3 min/212°F/Velocidad 1 100

Add 500 ml of water and salt to taste in the Thermomix glass. Program 5 Min./100°C/Speed 1. Once the water is boiling, add the peas (100 g) and program 3 Min./100°C/Speed 1. Remove the peas and place them in ice water to maintain their color.

Cooking the corn

Thermomix® Setting
8 min/212°F/Velocidad 1 100

Shell the corns (2 units) and place the grains in the Thermomix glass. Add 200 ml of water, sugar and anise to taste (optional). Program 8 Min./100°C/Speed 1. Remove and add to the bowl with the beetroots.

Dressing and final mixing

Add mayonnaise to taste, salt to taste and the juice of 1 lemon to the bowl with the vegetables. Mix well with the spatula until all the ingredients are well integrated. Serve cold.
