Description

Nut corners with apricot jam are a festive pastry that is easy to prepare with the Thermomix®. The main ingredients are margarine, sugar, eggs, flour and apricot jam. Preparation takes about 90 minutes, of which 45 minutes are active working time, and yields 24 servings. Ideal as finger food or dessert for festive occasions and the winter season.

Ingredients (11 ingredients)

  • 125 g Margarine (at room temperature)
  • 200 g Margarine (at room temperature)
  • 125 g Crystal sugar
  • 2 Päckchen Vanilla sugar
  • 2 Eggs
  • 300 g Flour
  • 1 TL Baking powder
  • 6 EL Apricot jam
  • 200 g brown sugar
  • 400 g Grated nuts (e.g. hazelnuts and almonds mixed)
  • 200 g Chocolate glaze

Preparation (11 steps)

Preheat oven and prepare baking sheet

Preheat the oven to 180 °C (convection: 160 °C). Line a deep baking sheet with baking paper and set aside.

Mix margarine, sugar and vanilla sugar

Put 125 g margarine (at room temperature), 125 g crystal sugar and 1 packet of vanilla sugar into the mixing bowl and mix for 20 sec/speed 4.

Add eggs and mix

Add 2 eggs and stir in for 15 sec/speed 3.

Add flour and baking powder and mix

Add 300 g flour and 1 tsp baking powder to the mixing bowl and mix for 30 sec/speed 4. If necessary, scrape from the edge with a spatula.

Knead dough

Remove the dough from the mixing bowl and knead into a smooth dough with your hands.

Roll out dough and spread with jam

Press the dough evenly onto the prepared baking sheet and spread thinly with 6 tbsp apricot jam.

Prepare nut mixture

Put 200 g margarine (at room temperature), 25 ml water, 200 g brown sugar and 1 packet of vanilla sugar into the mixing bowl and heat for 5 min/80°C/speed 2 until the sugar has dissolved.

Add nuts and mix

15 sec/keine/Speed 2 Reverse

Add 400 g grated nuts (e.g. hazelnuts and almonds mixed) and mix for 15 sec/reverse/speed 2.

Spread nut mixture and bake

Spread the nut mixture evenly on the jam layer. Place the baking sheet in the preheated oven and bake for 30-35 minutes.

Let cool and cut

Let the cake cool on the baking sheet. Then cut into nut corners, for example cut 3 horizontal and 5 vertical rows and halve the resulting pieces.

Prepare chocolate glaze and decorate nut corners

Prepare 200 g chocolate glaze according to the package instructions. Dip the tips of the nut corners into the glaze and let harden on baking paper.
