Description

With the Thermomix®, shortcrust pastry cookies with nut-jam filling are a breeze. Egg yolks, powdered sugar, butter, flour and nuts are processed into a fine dough and filled with apricot jam. Preparation takes about 90 minutes and yields a larger portion of cookies. Ideal for Christmas time, as a dessert or finger food for the whole family.

Ingredients (8 ingredients)

  • 1 Stück Egg yolks
  • 50 g Powdered sugar
  • 100 g Butter
  • 150 g Flour
  • Cookie crumbs crumbled small
  • Grated nuts
  • Apricot jam
  • some Rum to taste

Preparation (8 steps)

Mix ingredients for the dough

Place egg yolks, powdered sugar and butter in the mixing bowl and mix for 20 sec./speed 4.

Add flour and process into a dough

Thermomix® Setting

Add flour and process into a dough for 2 min./kneading stage.

Cool dough

Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.

Preheat oven

Preheat oven to 180°C top/bottom heat.

Prepare filling

Mix cookie crumbs, grated nuts and apricot jam in a bowl. Refine with rum to taste.

Shape and fill cookies

Halve the dough and roll out thinly on a floured work surface. Cut out circles or other shapes. Place a teaspoon of filling on half of the dough pieces. Place the remaining dough pieces on top and press the edges together well.

Bake cookies

Place the filled cookies on a baking sheet lined with baking paper and bake in the preheated oven for approx. 12-15 minutes until golden brown.

Let cool

After baking, let the cookies cool on a wire rack.
