Description

These currant rings from the Thermomix® are a fine pastry with butter, icing sugar, egg yolk and lemon zest. Preparation in the Thermomix® takes about 180 minutes, of which 45 minutes are active working time. The recipe yields an unknown number of portions. Ideal as finger food or dessert, especially suitable for festive occasions and the Christmas season.

260 g Butter
160 g Icing sugar
2 Stück Egg yolk
0.125 Stück Organic lemon. Zest
1 Pr. Salt
450 g Flour
200 g Currant jelly
Icing sugar

Preparation (6 steps)

Prepare dough

Thermomix® Setting

2 min/Kneading speed

Add butter, flour, egg yolk, lemon zest and salt to the mixing bowl and knead for 2 min./kneading setting to form a dough.

Cool dough

Wrap the dough in cling film and refrigerate for 1-2 hours.

Preheat oven

Preheat oven to 175°C.

Roll out and cut out dough

Line a baking sheet with baking paper. Roll out the dough on a floured work surface to a thickness of 3-4 mm. Cut out the same amount of cookies and rings.
