Description

A delicious apple cake with a cinnamon cream topping, perfect for Christmas or the winter season.

Ingredients (19 ingredients)

  • 2 Stück Eggs
  • 280 g Sugar
  • 1 Pck. Vanilla sugar
  • 1 Prise(n) Salt
  • 115 g room temperature Butter
  • 100 g Wheat flour Type 405
  • 2 TL Baking powder
  • 4 TL Cinnamon
  • 1 kg acidic Apples (e.g. Cox Orange)
  • 1 EL Lemon juice
  • 1 Pck. Vanilla pudding powder (for cooking)
  • 100 ml Apple juice
  • 60 g Raisins
  • 400 g Whipping cream
  • 2 Pck. Cream stiffener
  • 200 g Low fat curd cheese
  • 100 g Walnuts
  • 1 TL Cane sugar
  • 15 g room temperature Butter

Preparation (17 steps)

Preheat oven

Preheat the oven to 160°C circulating air. This step is done without the Thermomix.

Beat eggs

Add 2 Eggs, 80 g Sugar, 1 Pck. Vanilla sugar and 1 pinch of Salt to the mixing bowl and whisk for 3 Min./speed 4 until fluffy.

Stir in butter

Add 115 g room temperature Butter and stir in for 30 Sec./speed 3.

Mix dry ingredients and fold in

Thermomix® Setting

Mix 100 g Wheat flour Type 405, 2 tsp Baking powder and 1 tsp Cinnamon in a separate bowl. Then add to the mixing bowl and fold in for 20 Sec./speed 2.

Bake dough

Pour the dough into a greased springform pan (26 cm) and bake in the preheated oven for about 20 minutes. This step is done without the Thermomix.

Let the base cool down

Remove the base from the mold and let it cool completely. This step is done without the Thermomix.

Prepare apples

Peel, quarter, core and dice 1 kg acidic Apples (e.g. Cox Orange). Mix with 1 tbsp Lemon juice. This step is done without the Thermomix.

Sauté apples

Put the apple cubes into the mixing bowl and sauté for 5 Min./100°C/Reverse rotation speed 1.

Prepare pudding

5 min/212°F/Speed 2 100

Mix 1 Pck. Vanilla pudding powder (for cooking), 100 g Sugar and 100 ml Apple juice in a separate bowl. Then add to the apples in the mixing bowl and bring to a boil for 5 Min./100°C/speed 2 while stirring.

Refine apple mixture

Add 1 tsp Cinnamon and 60 g Raisins and stir in for 10 Sec./Reverse rotation speed 1.

Distribute apple mixture

Spread the apple mixture on the cooled base. This step is done without the Thermomix.

Whip cream until stiff

Thermomix® Setting
2 min/keine/Speed 3.5

Add 400 g Whipping cream and 2 Pck. Cream stiffener to the mixing bowl and whisk with the butterfly for 2 Min./speed 3.5 until stiff. Keep an eye on the consistency.

Prepare curd cheese cream

Thermomix® Setting
20 sec/keine/Speed 3

Add 100 g Sugar, 1 tsp Cinnamon and 200 g Low fat curd cheese to the mixing bowl and mix for 20 Sec./speed 3.

Fold in cream

Transfer the curd cheese cream to a bowl and carefully fold in the whipped cream. This step is done without the Thermomix.

Spread cinnamon cream

Spread the cinnamon cream on the apple mixture and refrigerate the cake for 2 hours. This step is done without the Thermomix.

Caramelize walnuts

Melt 15 g room temperature Butter in a pan, add 100 g Walnuts, 1 tsp Cane sugar and 1 tsp Cinnamon and stir. Caramelize nuts while stirring and let cool. This step is done without the Thermomix.

Decorate cake

Spread the caramelized walnuts on the cake and serve. This step is done without the Thermomix.
