Description

These apple-oatmeal confections are a wonderful, healthier treat that is especially enjoyable in the colder seasons. I like to make them when I'm expecting visitors or simply need a small, nutritious sweet for in between. The combination of juicy apples and crunchy oatmeal, refined with almonds, is simply irresistible. They are not too sweet and are therefore also good as a breakfast snack or for children. The preparation is very simple and the Thermomix® makes it even easier. A great recipe that can be varied as desired - for example with cinnamon or raisins.

Ingredients (3 ingredients)

  • 2 piece large apples
  • 200 g fine oatmeal
  • 50 g chopped almonds

Prepare apples

Peel the apples, remove the core and cut into coarse pieces. Then add to the mixing bowl and chop for 5 sec./speed 5. Scrape down the side with the spatula.

Grind oatmeal

Add the oatmeal to the mixing bowl and grind finely for 10 sec./speed 8. Transfer.

Prepare dough

Add the chopped apples, ground oatmeal and chopped almonds to the mixing bowl and mix for 20 sec./speed 4/reverse. If necessary, help with the spatula.

Form and bake balls

Preheat the oven to 150°C top/bottom heat. Form small balls from the mixture and place on a baking tray lined with baking paper. Bake in the preheated oven for approx. 60 minutes. Turn occasionally so that the balls turn brown all around.

These apple-oatmeal confections have become a firm fixture in our home during Advent, although they actually taste good all year round. It all started with the desire to find a healthier alternative to classic Christmas cookies, something that you can snack on without a guilty conscience and that still provides energy. I still remember the first attempts, where the consistency was more like applesauce than confectionery. But with time and some adjustments, this recipe has emerged, which we love so much today. The apples form the basis for the juiciness of the confectionery. I prefer tart varieties such as Boskoop or Elstar, as they provide a nice contrast to the sweetish oatmeal. The oatmeal provides the necessary binding and a pleasant, slightly nutty note. Here it is important to use fine oatmeal, as it combines better with the apples and results in a more even texture. The almonds contribute a crunchy bite and another nutty aroma. They can also be replaced by other nuts such as hazelnuts or walnuts, depending on taste. The Thermomix® makes preparation much easier. Chopping the apples and grinding the oatmeal is lightning fast and even. It is important not to puree the apples too finely, otherwise the confectionery will become too moist. After mixing all the ingredients, the dough should be slightly sticky. If it is too liquid, you can add some more oatmeal. When forming the balls, it helps to moisten your hands slightly. The baking time may vary depending on the oven. The confections are ready when they are golden brown in color and feel firm. While baking, you should turn them occasionally so that they brown evenly. For a vegan version, you can omit the addition of honey or maple syrup if you like the recipe sweeter. Instead, you can use some applesauce or date syrup. If you like it more festive, you can add a teaspoon of cinnamon, some gingerbread spice or a pinch of cardamom to the dough. Raisins, cranberries or chopped dates also go perfectly in this recipe. The apple-oatmeal confections taste best on their own, but they also go well with a glass of milk, yogurt or quark. They are an ideal snack for in between, a healthy dessert or a delicious side dish to coffee. The confections can be stored well in a cookie tin. They stay fresh for several days. You can also prepare them well and store the dough in the refrigerator until you want to bake it. This way you always have a healthy snack at hand.
