Description

This apple plum crumble cake is a poem! I especially like to bake it in autumn when apples and plums are in season. The combination of the fruity compote and the crispy crumbles is simply irresistible. The cake is perfect for a cozy afternoon with friends or family. It can be prepared well in advance and still tastes delicious the next day. An absolute must for all cake lovers!

Ingredients (13 ingredients)

  • 1 kg Apples
  • 400 ml Apple juice
  • 2 Pck. Vanilla sugar
  • 2 tbsp Cornstarch
  • 900 g Plums
  • 1 piece Cinnamon stick
  • 1 tbsp Brown sugar
  • 200 g Brown sugar
  • 500 g Flour
  • 300 g Butter
  • 1 pinch Salt
  • 1 piece Egg (size M)
  • 2 tbsp Powdered sugar

Preparation (7 steps)

Prepare and cook apples

Thermomix® Setting
5 min/212°F/Speed 1 100

Peel, quarter, core and cut the apples into small cubes. Place the apple pieces in the mixing bowl with 150 ml apple juice and 1 packet of vanilla sugar. Cook for 5 min./100°C/speed 1.

Thicken apple compote

Thermomix® Setting
1 min/212°F/Speed 2 100

Stir 1 tbsp cornstarch with 50 ml apple juice until smooth. Add the stirred starch to the mixing bowl and stir in for 1 min./100°C/speed 2. Then transfer the apple compote to a bowl and let it cool, stirring occasionally.

Prepare and cook plums

Thermomix® Setting
5 min/212°F/Speed 1 100

Wash, halve and pit the plums. Place the plum halves in the mixing bowl with 150 ml apple juice, a cinnamon stick and 1 tbsp sugar. Cook for 5 min./100°C/speed 1.

Thicken plum compote

Thermomix® Setting
1 min/212°F/Speed 2 100

Stir 1 tbsp cornstarch with 50 ml apple juice until smooth. Add the stirred starch to the mixing bowl and stir in for 1 min./100°C/speed 2. Then transfer the plum compote to a bowl, remove the cinnamon stick and let the compote cool, stirring occasionally.

Prepare crumbles

Thermomix® Setting
2 min/Kneading speed

Put flour, butter in flakes, 200 g sugar, salt, 1 packet of vanilla sugar and egg into the mixing bowl. Process into crumbles for 2 min./kneading stage. If necessary, help with the spatula.

Cover the cake

Spread a good 2/3 of the crumbles on a greased baking sheet and press down with your hands to form a base. Alternately spread approx. 10 cm wide strips of apple and plum compote on the base. Sprinkle the remaining crumbles over the top.

Bake cake

Bake the cake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) on the lower rack for approx. 45 minutes. Let cool on a wire rack. Cut into pieces and dust with powdered sugar.
