Description

This apple white wine curd cream is a wonderfully light dessert that I particularly like to prepare when I need something quick. The combination of fruity apples, a hint of white wine and the creamy curd cream layer is simply irresistible. Perfect for birthdays or just when you feel like something sweet. The preparation is very easy and the result tastes simply delicious! An absolute favorite recipe that is always well received by my guests. And the best thing: it can be prepared wonderfully!

Ingredients (10 ingredients)

  • 125 ml White wine
  • 250 ml Water
  • 200 g Sugar
  • 3 Pck. Vanilla sugar
  • 1 Pck. Vanilla pudding powder
  • 3 piece Apples
  • 250 g Low-fat curd
  • 1 container Whipped cream
  • 3 tbsp Icing sugar
  • 1 etwas Cinnamon

Preparation (8 steps)

Prepare apples

Thermomix® Setting
5 sec/Speed 5

Peel, core and quarter the apples. Then put them in the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Cook vanilla pudding

Thermomix® Setting
8 min/212°F/Speed 2 100

Put white wine, water, sugar, 1 packet of vanilla sugar and vanilla pudding powder in the mixing bowl and cook for 8 min./100°C/speed 2.

Stir in apples

Add the chopped apples to the still warm pudding mixture in the mixing bowl and stir in for 10 sec./reverse/speed 2. Transfer the apple pudding mixture and let it cool.

Whip cream until stiff

2 min/Speed 3.5

Insert the butterfly. Put whipped cream and 2 packets of vanilla sugar in the mixing bowl and whip until stiff for 2 min./speed 3.5. Remove the butterfly and transfer the cream.

Prepare curd

Put low-fat curd and icing sugar in the mixing bowl and mix for 20 sec./speed 3.

Fold in cream

Add the whipped cream to the curd in the mixing bowl and fold in for 10 sec./reverse/speed 2.

Layer dessert

Fill the dessert glasses alternately with the apple pudding mixture and the curd cream.

This apple white wine curd cream is a recipe that has established itself in my family over the years. Originally, it was a makeshift solution when visitors came unexpectedly and the refrigerator didn't have much more to offer than apples, curd and an opened bottle of white wine. What started as an experiment quickly became a permanent part of our dessert repertoire. The list of ingredients is deliberately kept simple, but each component plays an important role. The apples, preferably a tart variety such as Boskoop or Elstar, bring a fruity freshness and a pleasant bite to the cream. The white wine, a dry Riesling or Silvaner is an excellent choice, gives the pudding a subtle acidity and depth. The sugar provides the necessary sweetness, while the vanilla pudding powder binds the mixture and creates a creamy consistency. The low-fat curd forms the basis for the curd cream layer and provides a light acidity that harmonizes perfectly with the sweetness of the other ingredients. The whipped cream makes the cream airy and light. Cinnamon, as a final spice, rounds off the taste profile and provides a warm, wintery note. When preparing in the Thermomix®, it is important not to chop the apples too finely. They should still be recognizable and form a pleasant contrast to the creamy pudding mixture. When cooking the pudding, make sure that the temperature is not too high to prevent burning. The reverse cycle when stirring in the apples prevents them from becoming mush. When whipping the cream, it is important to keep an eye on the Thermomix® to avoid butter formation. The cream should be firm but not too stiff. The recipe is already suitable for a vegetarian version. A vegan version requires a little more adjustment. Instead of low-fat curd, you can use soy curd or another plant-based curd alternative. The whipped cream can be replaced with whipped vegan cream. Agar-agar can be used as a binding agent for the pudding instead of vanilla pudding powder. Experiment with other spices such as cardamom, nutmeg or ginger to give the dessert an individual touch. The apple white wine curd cream can be wonderfully served in small glasses or bowls. Almond slivers, roasted nuts or a few fresh berries are a good accompaniment. You can also serve the cream with a biscuit or ladyfinger. The cream can be prepared well in advance and stored in the refrigerator. It can be kept for 1-2 days without any problems. However, it should be briefly whipped again before serving to maintain its airy consistency.
