Description

This creamy curd cheese yogurt dessert with tangerines is an absolute delight! I have been making it for years and it is always well received, especially for birthdays or as a sweet ending to a cozy brunch. The combination of the light curd cheese yogurt cream and the fruity tangerines is simply delicious. The crumbled butter biscuits provide a crispy contrast. The dessert can be prepared well in advance and tastes best when it has been infused for a few hours. A simple but festive dessert that is guaranteed to please everyone!

Ingredients (8 ingredients)

  • 400 ml Whipped cream
  • 2 Pck. Vanilla sugar
  • 2 Pck. Cream stiffener
  • 500 g Curd cheese
  • 500 g Natural yogurt
  • 200 g Sugar
  • 2 can Tangerines
  • 250 g Butter biscuits

Preparation (7 steps)

Whisk the cream until stiff

Insert the butterfly. Add 400 ml whipped cream, 2 packs vanilla sugar and 2 packs cream stiffener into the mixing bowl and whisk until stiff for 2 min/speed 3.5. Transfer the whipped cream and refrigerate.

Prepare curd cheese yogurt cream

Thermomix® Setting

Remove the butterfly. Add 500 g curd cheese, 500 g natural yogurt and 200 g sugar into the mixing bowl and stir until creamy for 30 sec/speed 3.

Fold in the cream

Carefully fold the whipped cream into the curd cheese yogurt cream with a spatula.

Prepare and fold in the fruits

Drain 2 cans of tangerines (or 1 large can of peaches/apricots). If necessary, cut peaches or apricots into small pieces beforehand. Carefully fold the fruits into the cream with a spatula.

Crumble biscuits

Place 250 g butter biscuits in a freezer bag and crumble with a rolling pin or your hands. Alternatively, the biscuits can also be crushed in the mixing bowl for 5 sec/speed 5.

Layer dessert

Optionally layer in dessert glasses or a large bowl. First a layer of crumbled biscuits, then a layer of curd cheese yogurt cream. Finish with a layer of biscuits.

Let the dessert infuse

The dessert should infuse in the refrigerator for a few hours, preferably overnight, before serving.

This recipe for a creamy curd cheese yogurt dessert with tangerines is a classic in my family. It originally came from my grandma, who always prepared it for birthdays and family celebrations. She has slightly adapted it over the years, and this version is my interpretation of her recipe. It is a dessert that evokes memories and simply makes you happy. The ingredients are deliberately kept simple, but each plays an important role. The whipped cream provides the airy, light texture of the cream. The vanilla sugar and cream stiffener stabilize the cream and give it a fine vanilla aroma. The curd cheese and natural yogurt form the basis of the cream and bring a pleasant acidity that harmonizes perfectly with the sweetness of the sugar. The tangerines, or alternatively peaches or apricots, provide a fruity note and a juicy consistency. The butter biscuits form the crispy contrast to the soft cream and the juicy fruits. When preparing in the Thermomix®, it is important not to whip the cream for too long, as it can otherwise become buttery. Observe the process carefully and stop the Thermomix® as soon as the cream is stiff. When folding in the cream and the fruits, be careful not to let the cream collapse. Use a spatula and carefully fold in the ingredients. The biscuits can either be crushed in a freezer bag with a rolling pin or briefly crushed in the Thermomix® on level 5. Make sure that the biscuits are not ground too finely, otherwise they will lose their crispy texture. For a vegetarian version, you can simply make sure that the butter biscuits used do not contain any animal fats. A vegan version is a bit more difficult, but possible. Use vegetable cream, vegetable curd cheese and yogurt based on soy or almond. Make sure that the vegetable cream can be whipped well. Instead of vanilla sugar, you can also use the pulp of a vanilla pod. For a special touch, you can refine the cream with some lemon zest or a shot of orange liqueur. Serve the dessert well chilled in dessert glasses or a large bowl. Garnish with fresh tangerine pieces or some crumbled biscuits. A glass of sparkling wine or a light white wine goes well with this. The dessert can be prepared well in advance and will keep in the refrigerator for 2-3 days. It tastes even better when it has been infused for a few hours, as the aromas can then develop better. You can also portion the dessert into individual glasses and freeze it. Before serving, let it thaw in the refrigerator.
