Description

This layered dessert with grapes and cookie pieces is a refreshing treat for warm days! I especially like to make it when I need something quick and still want to offer something delicious. The combination of creamy curd-mascarpone-cream and crunchy grapes, rounded off with crispy cookie pieces, is simply irresistible. It is perfect for birthdays, barbecue parties or simply as a sweet reward in between. The dessert is prepared in no time and tastes simply delicious! Feel free to vary with different types of cookies or add some fresh berries.

Ingredients (7 ingredients)

1000 g Grapes seedless
100 g Sugar
1 Pck. Vanilla sugar
250 g Low-fat curd
250 g Whipping cream
250 g Mascarpone
2 Pck. Cookies

Preparation (5 steps)

Whip cream until stiff

Thermomix® Setting

Put 250 g whipping cream, 100 g sugar and 1 pack of vanilla sugar into the mixing bowl and whip until stiff with the butterfly 2 min./speed 3.5. Remove the butterfly and transfer the cream.

Stir curd and mascarpone

20 sec/Speed 3

Put 250 g low-fat curd and 250 g mascarpone into the mixing bowl and stir for 20 sec./speed 3.

Make cream

Thermomix® Setting

10 sec/Speed 2 Reverse

Add the whipped cream to the curd-mascarpone mixture in the mixing bowl and fold in 10 sec./speed 2 reverse.

Chop cookies

5 sec/Speed 5

Put 2 packs of cookies into the mixing bowl and chop 5 sec./speed 5.

Layers

Put 1 kg of seedless grapes in a bowl, spread half of the cream on top and sprinkle with half of the chopped cookies. Add the remaining grapes, cover with the remaining cream and sprinkle with the remaining cookies.
