Description

This peach curd dessert is an absolute delight for warm days! The combination of creamy curd, fruity peaches and slightly sour lingonberries is simply irresistible. I especially like to make it when I have guests because it can be prepared well in advance and is always well received. The roasted cashews with brown sugar provide a crunchy contrast. A quick and easy dessert that is guaranteed to please everyone!

Ingredients (8 ingredients)

  • 250 g Peach Halves Fruit (Canned)
  • 500 g Low-Fat Curd Cheese
  • 400 g Sour Cream
  • 1 Pck. Vanilla Sugar
  • 1 Pck. Cream Stiffener
  • 200 g Wild Lingonberries
  • 100 g Natural Cashews
  • 50 g Brown Raw Cane Sugar

Preparation (6 steps)

Chop cashews

Thermomix® Setting
5 sec/Speed 5

Place 100 g cashews in the mixing bowl and chop for 5 sec./speed 5. Transfer and set aside.

Roast cashews

Roast the chopped cashews in a pan without fat until light brown. Let cool and mix with 50 g brown raw cane sugar.

Prepare peaches

Drain 1 can of peaches and cut into approx. 1 cm cubes.

Prepare curd cream

Thermomix® Setting
20 sec/Speed 3

Place 500 g curd cheese, 400 g sour cream, 1 packet vanilla sugar and 1 packet cream stiffener in the mixing bowl and mix for 20 sec./speed 3.

Layer dessert

Place half of the peach cubes in a large dessert bowl. Dab half of the lingonberries on top and cover with half of the curd cream. Layer the remaining peaches, lingonberries and cream on top as well.

Chill and Serve

Refrigerate the peach curd cream for 30 minutes. Sprinkle with the roasted cashews and brown sugar just before serving.
