Description

This aquafaba dream whip is a delightful vegan alternative to traditional whipped cream. I've been experimenting with aquafaba for a while now, and this recipe is a winner! The secret is chilling the aquafaba beforehand – it makes all the difference. It's light, fluffy, and perfect for topping desserts, fruit salads, or even adding a dollop to your morning coffee. The erythritol sweetener keeps it low-carb, and the coconut oil adds a subtle richness. It's so easy to make, and everyone will be amazed that it's completely plant-based. Ingredients (5 ingredients)

  • 0.75 cup aquafaba (liquid from can of chickpeas)
  • 0.25 tsp cream of tartar
  • 1 tablespoon vanilla extract
  • 0.66666666666667 cup powdered erythritol sweetener
  • 2 tablespoons melted coconut oil

Chill Aquafaba

Refrigerate aquafaba for at least 4 hours, or overnight. This step is crucial for achieving the right consistency.

Place the chilled aquafaba and cream of tartar into the Thermomix bowl. Attach the butterfly whisk. Whip for 2 minutes/Stufe 3.5 until foamy. Then continue to whip for 2 minutes/Stufe 3.5 until stiff peaks form.

Add vanilla extract to the Thermomix bowl. Beat for 1 minute/Stufe 3.5 to incorporate.

Incorporate Sweetener and Coconut Oil

Add powdered erythritol sweetener and melted coconut oil to the Thermomix bowl. Whip until fully incorporated, about 1 minute/Stufe 3.5.
