Description

This aromatic oven vegetables is a simple and quick dish that is perfect as a main course. With fresh new potatoes, peppers, zucchini, mushrooms, cherry tomatoes, red onion, garlic and feta cheese, it is a vegetarian dish full of flavor. The preparation in the Thermomix® facilitates the preparation and ensures an even result. Ideal for a healthy and delicious meal.

Ingredients (8 ingredients)

  • 1 Pck. Spice preparation for oven vegetables
  • 500 g New potatoes
  • 500 g Vegetables (e.g. peppers, zucchini, mushrooms)
  • 150 g Cherry tomatoes
  • 1 Onion, red
  • 6 Garlic cloves
  • 100 g Feta cheese
  • Olive oil

Preparation (5 steps)

Chop onion and garlic

Peel and quarter the red onion. Peel the garlic cloves. Put onion and garlic in the mixing bowl and chop for 3 sec./speed 5. Use the spatula to scrape everything down from the edge.

Prepare vegetables

Wash and halve or quarter the new potatoes, depending on their size. Clean the peppers, zucchini and mushrooms and cut into bite-sized pieces. Halve the cherry tomatoes.

Mix vegetables

Place new potatoes, peppers, zucchini, mushrooms and cherry tomatoes in a large bowl. Add the chopped onion and garlic from the mixing bowl. Add the spice preparation for oven vegetables and olive oil and mix everything well so that the vegetables are evenly covered.

Bake oven vegetables

Spread the vegetables on a baking sheet and bake in a preheated oven at 200°C top/bottom heat for approx. 30 minutes until the vegetables are cooked and lightly browned.

Add feta

Crumble the feta cheese and sprinkle it over the vegetables for the last 5 minutes of baking time. Finish baking the oven vegetables with the feta cheese.
