Description

This tomato cream soup is a real treat! I especially like to make it in the summer when the tomatoes are nice and ripe and aromatic. The soup is wonderfully creamy and simply tastes delicious. Refined with fresh herbs, it is an absolute highlight. It is not only vegetarian, but can also be wonderfully prepared in advance and is perfect as a starter or light main course. A dash of cream or a dollop of cream cheese make it even creamier. Try it out, you will be thrilled!

Ingredients (8 ingredients)

  • 1 kg Tomatoes
  • 2 piece Onions
  • 3 clove Garlic
  • 0.75 l Olive oil for frying
  • 1 pinch Salt
  • 1 pinch Pepper
  • 1 pinch Herb salt, white
  • 3 tsp Thyme, dried

Preparation (7 steps)

Prepare tomatoes

Score the tomatoes crosswise on the underside, place in a large bowl and pour boiling or hot water over them. After 10 minutes, carefully remove the skin and green stem from the tomatoes and cut the peeled tomatoes into small pieces.

Chop onions and garlic

Peel the onions, halve them and place them in the mixing bowl together with the garlic cloves. Chop for 3 sec./level 5.

Sauté onions and garlic

Add olive oil (0.75 liters) to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/level 1.

Add tomatoes and simmer

Add the prepared tomato pieces to the mixing bowl and simmer for 5 min./100°C/level 1.

Season and cook

Thermomix® Setting
20 min/212°F/Speed 1 100

Add salt, pepper, herb salt and dried thyme (3 tsp) to the mixing bowl and cook for 20 min./100°C/level 1.

Puree soup

Thermomix® Setting
30 sec/Speed 10

Puree the soup for 30 sec./level 10 until a fine consistency is achieved. If necessary, use the spatula to push down from the edge and repeat the process.

Season and serve

Season the soup with salt, pepper and herb salt and serve with fresh parsley.
