Description

This Asturian rice with meat is a traditional and comforting dish, perfect for cold days. I have been preparing this recipe for years and it is always a success at home. The combination of rice with pork ribs, lean meat, chicken, fresh sausages and fresh chorizo makes it a very complete and tasty dish. The sauté of garlic, onion and green pepper gives it a special touch. It is ideal for a family meal or a celebration. Go ahead and try it, you will love it! You can add a little fresh rosemary at the end for an even more delicious aroma.

Ingredients (17 ingredients)

  • 450 g Round rice
  • 1 puñadito Peas (frozen or canned)
  • 250 g Chopped pork ribs
  • 200 g Lean or lean pork or ham meat, fresh
  • 250 g Chopped chicken
  • 4 piece Fresh white sausages
  • 4 piece Fresh chorizo or red sausages
  • 1 clove Garlic
  • 1 piece Small white onion
  • 0.5 piece Italian green pepper
  • 2 cucharadas Tomato sauce
  • 3 container Chicken or meat broth
  • 1 al gusto Extra virgin olive oil
  • 1 al gusto Salt
  • 1 al gusto Pepper
  • 1 al gusto Saffron (or food coloring)
  • 1 ramita Fresh rosemary (optional)

Preparation (9 steps)

Prepare the sauté

Peel the garlic clove and the onion. Wash and cut the Italian green pepper in half. Introduce the garlic, onion and pepper in the Thermomix bowl and crush for 3 sec./Stufe 5. Lower the remains of the walls of the bowl with the spatula.

Sauté the vegetables

Add extra virgin olive oil to the bowl and sauté for 5 Min./120°C/Stufe 1.

Add the tomato sauce

Thermomix® Setting
2 min/248°F/Speed 1 120

Add the tomato sauce to the bowl and sauté for 2 Min./120°C/Stufe 1.

Incorporate the meat

In a separate frying pan, brown the chopped pork rib, the lean pork or fresh ham meat and the chopped chicken. Once the meat is browned, add it to the Thermomix bowl.

Add the sausages and the chorizo

Add the fresh white sausages and the fresh chorizo or red sausages to the Thermomix bowl.

Add the rice and the broth

Add the round rice, chicken or meat broth (3 times the volume of the rice), salt, pepper to taste and saffron (or food coloring) to the Thermomix bowl. Stir with the spatula to integrate all the ingredients.

Cook the rice

Program 8 Min./100°C/Stufe 1 and then 8 Min./100°C/Stufe 1. During cooking, stir occasionally with the spatula, turning over the larger pieces of meat.

Add the peas

Thermomix® Setting
2 min/212°F/Speed 1 100

Add the peas to the Thermomix bowl and program 2 Min./100°C/Stufe 1.

Let it rest

Turn off the Thermomix and let it rest covered for 10 minutes to finish cooking. Before covering, you can add a sprig of fresh rosemary to scent the rice.
