Description

This Asian noodle soup with chicken is a real treat! The combination of tender egg noodles, juicy chicken and crunchy vegetables in an aromatic broth with coconut milk and a hint of curry is simply irresistible. I especially like to make this soup when it's cold outside, because it warms you from the inside and tastes like vacation. The preparation is super easy and quick, so it is also perfect for after work. If you like it a little spicier, you can add a little more chili powder. An absolute favorite recipe!

Ingredients (22 ingredients)

  • 125 g Egg noodles
  • 1.5 l Vegetable stock
  • 500 ml Coconut milk
  • 1 piece Onion(s)
  • 2 Zehe(n) Garlic
  • 250 g Chicken breast fillet(s)
  • 4 piece Spring onion(s)
  • 2 piece Bell pepper(s) red and yellow
  • 180 g Vegetable Chinese vegetables
  • 1 can Corn
  • 200 ml Orange juice
  • 3 tbsp Soy sauce
  • 3 tbsp Rice vinegar
  • 3 tbsp Curry paste red
  • 1 tsp Cumin
  • 2 tsp Turmeric
  • Salt
  • Pepper
  • Chili powder
  • Curry powder
  • Sugar
  • Parsley

Preparation (7 steps)

Chop onion and garlic

Peel 1 onion and place 2 cloves of garlic in the mixing bowl and chop for 3 sec./level 5. Push down with the spatula.

Sauté the vegetables

Add the chopped onion and garlic with a little oil to the mixing bowl and sauté for 3 min./120°C/level 1.

Add peppers and spring onions

Cut 2 bell peppers (red and yellow) and 4 spring onions into pieces and add to the mixing bowl and chop for 3 sec./level 4. Push down with the spatula.

Add stock, coconut milk and orange juice

Add 1.5 liters of vegetable stock, 500 ml of coconut milk and 200 ml of orange juice to the mixing bowl.

Season and simmer the soup

Add 3 tbsp soy sauce, 3 tbsp rice vinegar, 3 tbsp curry paste (red), 1 tsp cumin, 2 tsp turmeric, salt, pepper, chili powder and some sugar to the mixing bowl and simmer for 15 min./100°C/level 1.

Add vegetables, noodles and chicken

Add 1 jar of Chinese vegetables (approx. 180 g), 1 small can of corn, 125 g of pre-cooked egg noodles and 250 g of fried and sliced ​​chicken breast slices to the mixing bowl and heat for 5 min./90°C/reverse rotation level 1.

Add finely chopped parsley and spring onion greens to the mixing bowl and stir in for 10 sec./level 1.
