Description
This beetroot salad with apple and walnuts is a real treat! I especially like to make it in autumn, when beetroot is in season. The combination of the slightly earthy sweetness of the beetroot, the acidity of the apple and the nutty aroma of the walnuts is simply unbeatable. The creamy yogurt-based dressing rounds everything off perfectly. A quick and healthy dish that is also great as a side dish. If you like, you can add a few pumpkin seeds for extra crunch. An absolute favorite recipe of mine!
Ingredients (7 ingredients)

1 Glas Beetroot

1 piece Apple sour
-
1 container Yogurt substitute vegan
-
2 tbsp Peanut oil
-
2 tbsp Agave syrup
-
2 tbsp Peanut butter
-
1 Handvoll Walnuts chopped
Preparation (4 steps)
Prepare beetroot and apple
Cut the beetroot and apple into bite-sized slices or pieces and place in a bowl. No Thermomix setting required.
Prepare dressing
Place the yogurt substitute, peanut oil, agave syrup and peanut butter in the mixing bowl and mix for 20 sec/speed 3.
Fold in dressing
Add the dressing from the mixing bowl to the beetroot and apple in the bowl and carefully fold in. No Thermomix setting required.
Serve salad
Sprinkle the salad with the chopped walnuts and serve. No Thermomix setting required.
