Description

This warm mushroom salad is a poem! I especially like to make it in autumn when it gets cooler outside. The different types of mushrooms, combined with the fresh lamb's lettuce and the slightly sweet dressing, create a great taste experience. The recipe is super easy and quick to prepare, perfect for a light lunch or as an appetizer. If you like, you can sprinkle some roasted nuts or croutons over it. An absolute must for all mushroom lovers!

Ingredients (13 ingredients)

  • 500 g Mushrooms mixed
  • 2 piece Onion(s)
  • 4 tbsp Olive oil
  • 1 tsp Thyme chopped
  • 1 tsp Rosemary chopped
  • 100 ml Vegetable stock
  • 50 ml Balsamic vinegar
  • 1 bunch Parsley chopped
  • 1 tbsp Honey
  • 200 g Lamb's lettuce
  • Salt and Pepper
  • to taste Nutmeg
  • Basil

Preparation (6 steps)

Chop onions

Peel 2 onions, quarter them and put them in the mixing bowl. Chop for 3 sec./level 5.

Sauté onions

Add 4 tbsp olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add and fry mushrooms

Thermomix® Setting
5 min/248°F/Speed 1 120

Add 500 g mixed, cleaned and chopped mushrooms to the mixing bowl. Fry for 5 min./120°C/level 1. Season with salt, pepper and a pinch of nutmeg. Add 1 tsp chopped thyme and 1 tsp chopped rosemary.

Simmer mushrooms

5 min/212°F/Speed 1 Linkslauf 100 Reverse

Add 100 ml vegetable broth and 50 ml balsamic vinegar to the mixing bowl. Simmer for 5 min./100°C/level 1 reverse.

Season and mix

Thermomix® Setting
10 sec/Speed 2 Linkslauf Reverse

Add 1 bunch of chopped parsley and some basil to the mushrooms in the mixing bowl. Add 1 tbsp honey and mix for 10 sec./level 2 reverse.

Arrange salad

Wash 200 g lamb's lettuce and put it in a salad bowl. Pour the warm mushroom mixture from the mixing bowl over the lamb's lettuce and mix carefully. Arrange the salad on plates and garnish as desired.
