Description

This poultry dish with morel and honey cream is a real delight for the taste buds. I often prepare it for special occasions, such as Christmas or New Year's Eve, because it is both festive and comforting. The poultry, cooked in milk and honey, becomes incredibly tender and flavorful. Morels bring a touch of refinement and their fragrance blends perfectly with the sweetness of honey. The creamy sauce is simply irresistible. A dish that will impress your guests for sure! Serve it with fresh pasta for a complete and gourmet meal.

Ingredients (7 ingredients)

  • 1 kg Chicken
  • 1 l Milk
  • 100 g Rehydrated morel(s)
  • 3 tbsp Honey
  • 3 tbsp Fresh cream
  • Salt
  • Pepper

Preparation (8 steps)

Rehydrate and blanch the morels

Thermomix® Setting
5 min/212°F/Speed 1 100

Put the rehydrated morels in a bowl and add lukewarm water. Let soak for 15 minutes. Then, pour the soaking water into the Mixtopf and bring the water to a boil by setting 5 Min./100°C/Stufe 1. Add the morels and blanch for 1 minute.

Drain and rinse the morels

Pour the morels and cooking water into the cooking basket and drain. Reserve the cooking water. Rinse the morels with cold water.

Prepare the morels

Cut the earthy feet from the morels and open them to remove any pebbles. Dry the morels on a cloth.

Cook the poultry

Thermomix® Setting
90 min/212°F/Speed 1 100 Reverse

Put the poultry in the Mixtopf. Add the milk, honey, salt and pepper. Cook for 90 Min./100°C/Stufe 1/Linkslauf.

Recover the cooking juices

Remove the poultry from the Mixtopf and reserve. Take 750 ml of cooking juices and filter through a fine sieve.

Prepare the sauce

Thermomix® Setting
5 min/194°F/Speed 3 90

Put the filtered cooking juices back in the Mixtopf. Add the fresh cream, salt and pepper. Mix 5 Min./90°C/Stufe 3.

Add the morels and reduce the sauce

Thermomix® Setting
10 min/194°F/Speed 2 90

Add the prepared morels to the Mixtopf and let the sauce reduce for 10 Min./90°C/Stufe 2.

Serve

Cut the poultry into four pieces and arrange on a preheated dish. Coat the pieces with the morel sauce. Arrange the morels and gingerbread slices around the poultry. Serve hot, accompanied by fresh pasta.
