Description

This recipe for herring with apple remoulade and fried potatoes is a delicious Nordic variation that I particularly like to prepare in spring and summer. The combination of the salty herring, the fruity apple remoulade and the hearty fried potatoes is simply unbeatable. The preparation is a bit more complex, but the result is worth it. The remoulade gets a fresh note from the apple, which goes perfectly with the fish. A great dish for a relaxed lunch or a light dinner with friends and family. The fried potatoes are pre-cooked in the Thermomix® and then fried crispy in the pan.

Ingredients (19 ingredients)

  • 600 g firm cooking potatoes
  • 5 tbsp Whole milk yogurt
  • 5 tbsp Salad mayonnaise
  • 4 piece Herring fillets
  • 4 piece Pickled gherkins (from the jar)
  • 1 piece Apple
  • to taste Salt
  • to taste Pepper
  • 3 tbsp Apple vinegar
  • 1 tsp Honey
  • 3 tbsp Sunflower oil
  • 1 piece Shallot
  • 0.25 piece Picking lettuce
  • 1 piece Carrot
  • 3 piece Spring onions
  • 1 piece red onion
  • 1 piece Onion
  • 2 tbsp Clarified butter
  • 50 g Bacon

Preparation (10 steps)

Pre-cook potatoes

Thermomix® Setting
20 min/Varoma/Speed 1 Varoma

Wash 600 g firm cooking potatoes and place in the simmering basket. Fill 1 liter of water into the mixing bowl, insert the simmering basket and cook for 20 min./Varoma/speed 1.

Prepare remoulade

Thermomix® Setting
10 sec/Speed 3

Put 5 tbsp whole milk yogurt, 5 tbsp salad mayonnaise and 2 tbsp pickle juice into the mixing bowl and stir for 10 sec./speed 3.

Prepare apple and gherkins

Cut 4 pickled gherkins into slices. Wash 1 apple, quarter it, remove the core and cut into wedges. Put the apple and gherkins in a bowl.

Complete remoulade

Add the prepared sauce to the apples and gherkins, season with salt and pepper and mix. Transfer and set aside.

Prepare vinaigrette

10 sec/Speed 3

Put 3 tbsp apple vinegar, salt, pepper and 1 tsp honey into the mixing bowl and stir for 10 sec./speed 3.

Refine vinaigrette

Thermomix® Setting

Add 3 tbsp sunflower oil drop by drop while mixing (10 sec./speed 3). Peel 1 shallot, cut into fine cubes and stir into the vinaigrette. Transfer and set aside.

Prepare salad

Clean ¼ picking lettuce, remove the leaves from the stem, wash and shake dry. Peel 1 carrot and cut into thin slices. Clean 3 spring onions, wash and cut into slices. Peel 1 red onion and cut into rings. Peel 1 onion and cut into cubes.

Prepare potatoes

Rinse the pre-cooked potatoes, peel them and cut them into slices.

Fry fried potatoes

Heat 2 tbsp clarified butter in a pan and fry the potatoes for approx. 7 minutes, turning carefully. During the last 3 minutes, fry 50 g bacon and diced onions as well.

Arrange salad

Mix the salad ingredients with vinaigrette. Arrange salad, potatoes and 4 herring fillets with sauce on plates. Place onion rings over the herring.
