Description

This fruity cod is an absolute highlight, especially in the cold season! The combination of juicy fish, sweet oranges and aromatic tomatoes is simply irresistible. I like to make this dish when I have guests because it's not only delicious but also quick to prepare. Preparing it in the oven is super easy and always succeeds. Served with a crispy ciabatta and fresh basil - simply delicious! If you like, you can add a little chili for a slight spiciness. A great dish for the whole family!

Ingredients (12 ingredients)

  • 2 piece Organic oranges
  • 400 g Beef tomatoes
  • 2 piece Red onions
  • 1 clove Garlic
  • 0.5 piece Lemon
  • 5 tbsp Olive oil
  • 640 g Cod fillet
  • to taste Salt
  • to taste Pepper
  • 2 tsp Capers
  • 1 piece Ciabatta
  • 5 Stiel Basil

Preparation (9 steps)

Prepare oranges

Wash the oranges in hot water and rub dry. Grate the zest of ½ orange and set aside. Peel the oranges so that the white skin is completely removed. Cut the peeled oranges into thin slices and set aside.

Prepare vegetables

Wash the beef tomatoes and dice roughly. Peel the red onions and garlic clove and dice finely. Squeeze the lemon and set the juice aside.

Chop onions and garlic

Put the diced onions and the garlic clove into the mixing bowl and chop for 3 sec./speed 5. Use the spatula to scrape down from the edge.

Prepare sauce

Add the olive oil, lemon juice and grated orange zest to the onions and garlic in the mixing bowl and sauté for 3 min./120°C/speed 1.

Prepare fish

Cut the cod into 8 pieces. Place the tomatoes and orange slices in a baking dish. Distribute the cod pieces on top.

Season fish and pour over sauce

Season the fish with salt and pepper. Pour the sauce from the mixing bowl over the fish and the tomato-orange mixture. Sprinkle the capers over it.

Bake fish

Place the baking dish in the preheated oven at 200 °C and bake for approx. 12 minutes.

Bake Ciabatta

Cut the ciabatta into slices and, after half the cooking time (approx. 6 minutes), spread them on a rack and bake until golden brown.

Arrange and serve

Garnish the fish with some fresh basil and serve with the ciabatta.
