Description

These baked vegetable meatballs are a great alternative to get children (and not only!) to eat vegetables. Potatoes, carrots and peas come together in a tasty mix, enriched with dried tomatoes, parsley and oregano. I prepare them often, varying the vegetables depending on the season and what I have in the fridge. They are perfect as a tasty appetizer or as a light side dish. The preparation is simple and quick, especially with the help of our beloved Thermomix®. Try them, they will win you over!

Ingredients (11 ingredients)

  • Potatoes
  • Frozen peas
  • Carrots
  • Sun-dried tomatoes in oil
  • 1 piece Egg
  • Parsley
  • to taste Dried oregano
  • to taste Fine salt
  • to taste Black pepper
  • to taste Extra virgin olive oil
  • Breadcrumbs

Preparation of the vegetables

Peel the potatoes and carrots, then cut them into similarly sized cubes. Drain the sun-dried tomatoes well from the preserving oil and cut them coarsely.

Cooking the potatoes and carrots

Pour 500 ml of water into the bowl. Insert the potatoes and carrots into the basket. Cook for 20 Min./Varoma/Stufe 1.

Cooking the peas

10 min/Varoma/Speed 1 Varoma

Remove the basket with the potatoes and carrots. Empty the bowl and pour in 300 ml of water. Add the frozen peas to the basket. Cook for 10 Min./Varoma/Stufe 1.

Chop the parsley

Thermomix® Setting
3 Sec./Speed 7

Drain the peas and set them aside. Rinse the parsley and put it in the bowl. Chop for 3 Sec./Stufe 7.

Preparation of the mixture

Transfer the cooked potatoes and carrots to a bowl and mash them with a fork. Add the chopped parsley, coarsely chopped sun-dried tomatoes, peas, egg, salt, pepper and oregano. Mix all the ingredients well.

Form the meatballs

Preheat the oven to 180°C in fan mode. Form the meatballs with your hands, taking care to make them the same size. Pass them in the breadcrumbs.

Baking in the oven

Line a baking tray with baking paper. Place the meatballs on the baking paper, spacing them apart, and pour a drizzle of extra virgin olive oil on the surface. Bake the tray in the preheated oven at 180°C for 12 Min.
