Description

These banana date walnut loaves are a delightful treat, perfect for breakfast or a sweet snack. I've been making these for years, and they always disappear quickly! The combination of ripe bananas, chewy dates, and crunchy walnuts creates a wonderful texture and flavor. The optional toasted coconut adds a lovely tropical touch. This recipe makes four small loaves, ideal for sharing or freezing for later. Feel free to experiment with different nuts or dried fruits to customize the recipe to your liking. Enjoy!

  • 2 teaspoon ground cinnamon
  • 2 cups whole wheat flour
  • 1.5 cups quick cooking oats
  • 1 cup all-purpose flour
  • 1 tablespoon baking soda
  • 1.5 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 2 cups dark brown sugar, packed
  • 0.75 cup butter
  • 1 container sour cream
  • 6 piece very ripe bananas, mashed
  • 3 piece eggs
  • 2.5 teaspoon vanilla extract
  • 2 cups chopped dates
  • 1 cup chopped walnuts
  • 0.5 cup toasted flake coconut
  • 0.25 cup dark brown sugar, divided
  • 2 tablespoon chopped dates, divided
  • 2 tablespoon chopped walnuts, divided
  • 2 tablespoon toasted flake coconut, divided
  • 1 tablespoon butter, melted

Preparation (8 steps)

Prepare Loaf Pans and Cinnamon Sugar

Preheat oven to 300 degrees F (150 degrees C). Grease four 7x3-inch loaf pans. In a small bowl, combine 1 tablespoon white sugar and 2 teaspoons ground cinnamon. Mix for 5 Sec./Stufe 3. Dust the insides of the greased loaf pans with the cinnamon sugar mixture.

Combine Dry Ingredients

Add 2 cups whole wheat flour, 1 ½ cups quick cooking oats, 1 cup all-purpose flour, 1 tablespoon baking soda, 1 ½ teaspoons ground cinnamon, and ½ teaspoon salt to the mixing bowl. Mix for 10 Sec./Stufe 4 to combine.

Cream Butter and Sugar

Add ¾ cup butter and 2 cups dark brown sugar to the mixing bowl. Cream together for 30 Sec./Stufe 4 until light and fluffy.

Add Wet Ingredients

Add 1 (16 ounce) container sour cream, 6 mashed very ripe bananas, 3 eggs, and 2 ½ teaspoons vanilla extract to the mixing bowl. Mix for 20 Sec./Stufe 3 until smooth.

Combine Wet and Dry Ingredients

Add the dry ingredients from the mixing bowl to the wet ingredients in the mixing bowl. Mix for 20 Sec./Stufe 3. Use the spatula to scrape down the sides of the bowl and mix for another 10 Sec./Stufe 3.

Fold in Dates, Walnuts, and Coconut

10 sec/Linkslauf Speed 2 Reverse

Add 2 cups chopped dates, 1 cup chopped walnuts, and ½ cup toasted flake coconut to the mixing bowl. Mix on Linkslauf Stufe 2 for 10 Sec. to gently fold in the ingredients.

Prepare Topping

In a small bowl, combine ¼ cup dark brown sugar, 2 tablespoons chopped dates, 2 tablespoons chopped walnuts, and 2 tablespoons toasted flake coconut. Mix for 5 Sec./Stufe 3.

Assemble and Bake

Spoon the batter into the prepared loaf pans. Sprinkle tops of each loaf with about 1 tablespoon of the dark brown sugar mixture. Brush each loaf with 1 tablespoon melted butter for a shiny glaze. Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of a loaf comes out clean.
