Description

These cereal bars are a healthy and delicious snack for in between meals or for breakfast. They are easy to prepare and consist of oat flakes, sunflower seeds, pumpkin seeds, cranberries, coconut oil, maple syrup and honey. Preparation takes about 30 minutes and yields 16 servings. Ideal for a vegan and vegetarian diet.

Ingredients (9 ingredients)

  • 180 g Oat flakes
  • 50 g Sunflower seeds
  • 50 g Pumpkin seeds
  • 70 g Desiccated coconut
  • 50 g Dried cranberries
  • 3 tbsp Coconut oil
  • 3 tbsp Maple syrup
  • 2 tbsp Honey
  • Dark chocolate (optional)

Preparation (7 steps)

Chop sunflower seeds and pumpkin seeds

Put 50g each of sunflower seeds and pumpkin seeds into the mixing bowl and chop for 3 sec./speed 5. Transfer.

Chop desiccated coconut

Put 70g desiccated coconut into the mixing bowl and chop for 3 sec./speed 5. Transfer.

Chop cranberries

Put 50g dried cranberries into the mixing bowl and chop for 3 sec./speed 5. Transfer.

Mix liquid ingredients

Put 3 tbsp coconut oil, 3 tbsp maple syrup and 2 tbsp honey into the mixing bowl and heat for 2 min./50°C/speed 2 until everything is melted and mixed.

Add dry ingredients

Add 180g oat flakes, the chopped sunflower seeds and pumpkin seeds, the chopped desiccated coconut and the chopped cranberries to the liquid ingredients in the mixing bowl and mix for 30 sec./reverse/speed 3.

Shape and cool cereal bars

Spread the mixture on a baking sheet lined with baking paper and shape into a rectangle. Refrigerate for at least 30 minutes until the mixture has hardened. Then cut into 16 bars.

Optional: Decorate with chocolate

Melt dark chocolate in a water bath or in the microwave. Decorate the cereal bars with it and cool again until the chocolate has hardened.
