Description

Turkish dough boats with ground meat filling are a hearty main course or finger food that is easily prepared in the Thermomix®. The main ingredients are flour, yogurt, yeast and ground meat. The recipe from the bread and rolls category is ideal for parties or as a warm snack. The preparation time is approx. 60 minutes for 4 servings. Suitable for anyone who loves hearty, Mediterranean cuisine.

Ingredients (20 ingredients)

  • 500 g Flour, Type 405
  • 250 ml Milk
  • 50 g Yogurt, 10% fat
  • 21 g Fresh yeast
  • 10 g Salt
  • 50 ml Olive oil
  • 0.5 TL Sugar
  • 1 Stück Egg, size M
  • White or black sesame
  • 400 g Whole canned tomatoes
  • 250 g Ground beef
  • 180 g Red pointed pepper
  • 4 Stück Spring onions
  • 1 Zehe Garlic clove
  • 1 TL Salt
  • 1 EL Olive oil
  • 1 TL Thyme, dried
  • 0.5 TL Cumin
  • 0.125 TL Black pepper from the mill
  • 0.125 TL Chili flakes

Preparation (14 steps)

Preheat oven

Preheat the oven to 200 °C top / bottom heat in good time.

Heat milk

Put 250 ml milk into the mixing bowl and heat for 2 min./37°C/speed 2.

Prepare yeast mixture

20 sec/Speed 3

Add 50 g yogurt, 21 g fresh yeast, 10 g salt and 1/2 tsp sugar to the warmed milk in the mixing bowl and stir for 20 sec./speed 3 until the yeast has dissolved.

Knead dough

Thermomix® Setting
3 min/Kneading speed

Add 500 g flour, 50 ml olive oil and the yeast mixture to the mixing bowl and knead into a dough for 3 min./kneading stage.

Dough rest

Remove the dough from the mixing bowl, shape into a ball and cover with a clean kitchen towel and let rest in a warm place for at least 30 minutes until it has doubled in size.

Prepare spring onions

Clean the spring onions, cut the white part into fine rings and the green part into coarse rings (keep the green rings for decoration).

Chop garlic

Peel 1 clove of garlic and put it in the mixing bowl. Chop for 3 sec./speed 7.

Prepare peppers

Wash, core and cut 180 g red pointed pepper into approx. 1 cm cubes.

Fry ground meat

Heat 1 tbsp olive oil in a hot pan and fry 250 g ground beef with the white spring onion rings and the pepper cubes until crumbly for approx. 5 minutes.

Season and simmer filling

Add garlic cubes, 1 tsp salt, 1 tsp thyme, ½ tsp cumin, 1/8 tsp black pepper from the mill and 1/8 tsp chili flakes and mix everything together. Then deglaze with the 400 g whole canned tomatoes (chop beforehand) and simmer for approx. 5 minutes and set aside if necessary.

Shape and top dough

After the dough has risen, quarter it and roll out the individual pieces into an oval shape with a small rolling pin. Place the dough pieces directly on a baking sheet lined with baking paper, add about 1/4 of the ground meat mixture and spread evenly over the dough. Fold the 2 cm of the long sides of the dough inwards, press the overlapping ends together to form a boat.

Brush and sprinkle dough

Whisk 1 egg in a small bowl and brush the edges with a brush. Sprinkle with white or black sesame seeds as desired.

Bake Pide

Place the baking sheet in the preheated oven on the 2nd rack from the bottom and bake the Pide for 20 minutes.

Decorate and serve

For decoration, sprinkle with the green spring onion rings and serve hot.
