Description

This Bavarian beer garden cheese, also known as Obatzda, is an absolute classic! I love making it because it's so quick and always a hit at any party. The creamy brie, the fine onions and the spices harmonize perfectly. Simply tastes delicious with pretzels and a cool beer. If you like it a little spicier, you can simply add a little more hot paprika powder. Ideal for a cozy evening with friends or as a delicious bread topping. And the best: It's vegetarian!

Ingredients (11 ingredients)

  • 200 g Brie
  • 30 g Butter
  • 2 tbsp Onion(s), very finely diced
  • 2 tbsp Sour cream
  • 0.25 tsp Paprika powder, hot
  • 1 tsp Paprika powder, mild
  • 2 Msp. Pepper, black, freshly ground
  • 1 Msp. Caraway powder
  • 0.25 tsp Sea salt
  • 0.5 tsp Mustard, medium-hot
  • 30 ml Beer, light or wheat beer

Preparation (3 steps)

Prepare brie

Remove the rind from the brie and cut into coarse pieces. Place the pieces in the mixing bowl.

Add and mix ingredients

Add butter, diced onions, sour cream, hot paprika powder, mild paprika powder, freshly ground black pepper, caraway powder, sea salt, medium-hot mustard and beer to the brie in the mixing bowl.

Season to taste and chill

Thermomix® Setting
10 sec/Speed 3

Use the spatula to scrape the Obatzda down from the edge and stir for another 10 sec./speed 3. Season to taste and add salt, pepper or paprika powder if necessary. Fill the Obatzda into a bowl and chill before serving.
