Description

This bean sweet potato stew is a hearty and warming main course, ideal for the autumn season. With sweet potatoes, beans, tomatoes and lentils, it is rich in fiber and nutrients. Preparation in the Thermomix® takes about 2 hours, including simmering time. Perfect for vegans and vegetarians.

Ingredients (19 ingredients)

  • 1 piece red Onion
  • 1 piece red bell pepper
  • 2 piece cloves Garlic
  • 500 g Sweet potatoes
  • 650 g cooked mixed Beans (can)
  • 400 g diced Tomatoes
  • 100 g red Lentils raw
  • 1 l Vegetable broth
  • 3 tbsp Olive oil
  • to taste Salt
  • to taste Pepper
  • 1 tsp Cumin
  • 1 tsp Coriander ground
  • 0.5 tsp Cinnamon ground
  • 1 tsp Paprika powder sweet
  • Chili flakes
  • 25 g chopped dark Chocolate (optional)
  • Yogurt or Skyr (for serving)
  • fresh Herbs (for garnish)

Preparation (7 steps)

Prepare vegetables

Dice 1 red onion and 1 red bell pepper with the Wundermix WunderSlicer V2. Place the WunderSlicer V2 on the mixing bowl lid and select the desired slice (fine/coarse). The cut material can be collected directly in the mixing bowl or separately. Peel 2 cloves of garlic.

Chop garlic

Put 2 cloves of garlic into the mixing bowl and chop for 3 sec./speed 7.

Sauté onions and peppers

Add 3 tbsp olive oil, the diced onion and bell pepper to the mixing bowl and sauté for 3 min./120°C/speed 1.

Season

Add salt, pepper, 1 tsp cumin, 1 tsp ground coriander, 1/2 tsp ground cinnamon, 1 tsp sweet paprika powder and chili flakes to the mixing bowl as desired and sauté briefly.

Simmer stew

Add 500g sweet potatoes, peeled and diced, 650g cooked mixed beans (drained weight), 400g diced tomatoes, 100g red lentils raw, washed and 1 l vegetable broth to the mixing bowl and simmer for 1.5 hours/100°C/speed 1 until the lentils are soft. Stir occasionally with the spatula.

Optional: Stir in chocolate

After the cooking time, optionally stir in 25g chopped dark chocolate.

I took the basic idea from a recipe from my childhood that my grandma always cooked and reinterpreted it with modern ingredients and the Thermomix®. The stew is a tribute to the simple, honest cuisine that nourishes and warms us. The sweet potato is the star here. It brings a natural sweetness and creaminess to the stew that harmonizes perfectly with the earthy flavors of the beans and lentils. The red lentils not only serve as an additional source of protein, but also bind the liquid and make the stew creamier. The mixed beans, from the can, are a practical and time-saving option. However, be sure to rinse them thoroughly before use to remove excess starch and preservatives. The diced tomatoes provide a fruity acidity that balances the dish. The Thermomix® makes preparing this stew incredibly easy. The WunderSlicer V2 is a real game changer when it comes to dicing onions and peppers quickly and evenly – without tears! When sautéing, make sure not to set the temperature too high so that the onions don't burn. The slow simmering at 100°C ensures that the flavors develop optimally and the lentils become nice and soft. Stir the stew occasionally with the spatula while it is cooking, especially at the beginning, so that nothing sticks to the bottom. For a vegan version, you can make sure that the vegetable stock is vegan. If you like it a little spicier, you can add more chili flakes or finely chop a fresh chili and sauté it with the onions. Instead of dark chocolate, you can also stir in a spoonful of peanut butter to give the stew a nutty note. Serve the stew with a dollop of yogurt or Skyr to give it a fresh, creamy component. Fresh herbs such as coriander or parsley are the icing on the cake and bring an additional variety of flavors into play. A piece of crispy bread or naan goes perfectly with this. The stew can be prepared well and stored in the refrigerator. It tastes even better the next day, as the flavors have then really blended together.
