Description

This warming bean soup is a real soul warmer! Inspired by the Greek Fasolada, it is rich in flavors and full of healthy ingredients. The combination of white giant beans, carrots, celery and aromatic herbs makes it a delicious and satisfying dish. Perfect for cold days or as a hearty lunch. I love how the flavors combine while simmering and develop a wonderful depth. A splash of olive oil and fresh parsley round off the dish. This soup is not only delicious, but also vegan and gluten-free - a treat for everyone!

Ingredients (15 ingredients)

  • 200 g white giant beans (dried)
  • 250 g Carrots
  • 2 Stange(n) Celery stalks
  • 1 piece Onion
  • 2 Zehe(n) Garlic
  • 40 ml Olive oil
  • 1 tbsp Tomato paste
  • 1 Dose(n) Pizza tomatoes (400 g)
  • 750 ml Vegetable broth
  • 1 tsp Thyme (dried)
  • 1 tsp Oregano (rubbed)
  • 0.5 tsp Savory
  • 5 g Parsley
  • to taste Salt
  • to taste Pepper

Preparation (8 steps)

Prepare beans

Soak 200 g of white giant beans in plenty of cold water overnight. The next day, drain in a sieve and rinse well.

Prepare vegetables

Peel and dice 250 g carrots. Clean and chop 2 stalks of celery. Peel 1 onion and 2 cloves of garlic.

Chop onion and garlic

Put 1 onion in the mixing bowl and chop for 3 sec./speed 5. Add 2 cloves of garlic and chop for 3 sec./speed 7.

Sauté onion and garlic

Add 40 ml olive oil and 1 tbsp tomato paste and sauté for 3 min./120°C/speed 1.

Add beans and liquid

Place the soaked and rinsed 200 g white giant beans, 1 can of pizza tomatoes (400 g) and 750 ml vegetable broth in the mixing bowl.

Simmer soup

Simmer for 60 min./100°C/gentle stir setting reverse.

Add vegetables

After 30 minutes, add 250 g diced carrots and 2 stalks of chopped celery through the lid opening.

Add herbs and spices

3 sec/Speed 5, 5 sec/Speed 3 Linkslauf Reverse

Put 5 g parsley in the mixing bowl and chop for 3 sec./speed 5. Add 1 tsp thyme, 1 tsp oregano, 0.5 tsp savory, salt and pepper and stir for 5 sec./speed 3 reverse.
