Description

This dish of beef fillets confit with herbs is a real delight for special occasions. The meat, of incomparable tenderness, is flavored with thyme, bay leaf, coriander and sage. A melting beef confit, ideal for a festive meal or a special dinner. I have been preparing this recipe for years and it always makes a splash with my guests. The long cooking at low temperature makes it possible to obtain incredibly tender meat. Accompanied by a homemade mashed potatoes, it's a treat!

Ingredients (10 ingredients)

  • 2 feuille of bay leaf
  • 1 branche of fresh Thyme
  • 10 gr crushed black pepper
  • 2 l olive oil
  • 1 bunch of coriander
  • 1 bunch of sage
  • 2 carottes carrots
  • 1 oignon onion
  • 500 gr coarse salt
  • 4 filets of beef of 200gr

Preparation (7 steps)

Preparation of flavored salt

Thermomix® Setting
10 sec/Speed 8

In the Thermomix bowl, mix 500 g of coarse salt, 10 g of crushed black pepper, 2 bay leaves and 1 sprig of fresh thyme. Mix 10 Sec./Stufe 8 to mix the spices well.

Coating the beef fillets

Roll the 4 200g beef fillets in the prepared flavored salt mixture. Make sure that the entire surface of the meat is well covered. Place the fillets in an airtight container and refrigerate for 24 hours.

Rinsing the fillets

After 24 hours, rinse the beef fillets thoroughly under cold water to remove excess salt. Dry the fillets well with paper towels.

Preparation of vegetables

Peel and slice 2 carrots. Peel and quarter 1 onion.

Confit cooking of the fillets

Thermomix® Setting
3 Heures/194°F/Speed 1 90

Place the beef fillets in the Thermomix bowl. Add the chopped carrots and onion. Completely cover the meat with 2 l of olive oil. Program 3 Heures/90°C/Stufe 1.

Preparation of herb sauce

Thermomix® Setting
15 sec/Speed 8

While the meat is cooking, prepare the herb sauce. In the Thermomix bowl, place 1 bunch of coriander and 1 bunch of sage. Add a little olive oil, salt and pepper. Mix 15 Sek./Stufe 8. Adjust seasoning if necessary.

Service

Once the meat is cooked, drain it and generously coat it with the herb sauce. Serve immediately.
