Incorporation of flour and baking powder

This melting chocolate and nougatine cake is a bit like my Proust's madeleine. It reminds me of my childhood snacks, when my grandmother prepared simple but incredibly comforting cakes. She didn't have a Thermomix®, of course, but the spirit is the same: an easy cake to make, with ingredients that we often have on hand, and which brings a real moment of happiness. The dark chocolate with nougatine chips is the star ingredient of this cake. It brings both the deep bitterness of dark chocolate and the caramelized crunch of nougatine. Choose a good quality chocolate, with a cocoa percentage of at least 60%, for a more intense taste. The butter, meanwhile, contributes to the melting texture of the cake. Use unsalted butter preferably, and make sure it is well softened before starting the preparation. The brown sugar brings a caramelized note and a pleasant moisture to the cake. If you don't have any, you can replace it with white sugar, but the result will be slightly different. Flour and baking powder are the basic elements of the cake's structure. Sift the flour before adding it to the preparation to avoid lumps. The eggs bind all the ingredients together and bring lightness to the cake. With the Thermomix®, preparing this cake is child's play. It is crucial to respect the times and speeds indicated for each step. When melting the chocolate and butter, watch carefully to prevent the chocolate from burning. If you find that the mixture is too hot, let it cool slightly before adding the eggs. When incorporating the flour and baking powder, use the spatula to scrape the sides of the bowl and make sure all the ingredients are well mixed. Do not mix too long, as this could make the cake hard. Butter and flour your cake tin carefully to prevent the cake from sticking. For a vegetarian version, you can replace the butter with vegetable margarine.
