Description

These puff pastry pieces with vanilla pudding and fruits are a real eye-catcher and super easy to prepare. I like to make them when things need to be quick and yet something special is to be put on the table. The puff pastry is baked until crispy and harmonizes perfectly with the creamy vanilla pudding and the fruity cocktail fruits. They are ideal for a cozy brunch on the weekend or as a sweet surprise for a birthday. If you like, you can also use fresh berries instead of cocktail fruits. An absolute favorite recipe!

Ingredients (8 ingredients)

  • 1 Pck. Puff pastry
  • 1 Pck. Vanilla pudding powder
  • 400 ml Milk
  • 40 g Sugar
  • 1 can Cocktail fruits
  • Icing sugar
  • Lemon juice
  • Egg white

Preparation (6 steps)

Prepare puff pastry

Preheat the oven to the temperature indicated on the puff pastry package. Place frozen puff pastry on a baking sheet lined with baking paper and remove the separating film. Allow to thaw for 10 minutes. Roll out fresh puff pastry directly on the baking paper.

Cut puff pastry

Cut the puff pastry into 8 - 10 squares. For windmill pieces, cut the dough from the middle into the corners, but do not cut through the middle, but leave about 5 cm whole.

Prepare pudding

Thermomix® Setting
7 min/212°F/Speed 3 100

Put 400 ml milk, the vanilla pudding powder and 40 g sugar into the mixing bowl and cook for 7 min./100°C/speed 3.

Top pieces

Let the pudding cool down a little. Put two spoons of pudding in the middle of each windmill or on each square. Drain 250 g of cocktail fruits and put 3 - 4 fruits on the pudding. In the case of windmills, fold every second half of the cut corner into the middle and press down. If the dough comes loose, use egg white as glue. For pudding pockets, fold the corners without pudding towards the middle.

Baking

Bake the puff pastry pieces in the preheated oven according to the package instructions.

Prepare icing (optional)

Thermomix® Setting
10 sec/Speed 3

After baking, put icing sugar and lemon juice into the mixing bowl and mix for 10 sec./speed 3. Spread the icing on the pudding pieces.
