Description

This sheet cake is a true classic and perfect for birthdays or a cozy Sunday brunch! I've been making it since I was a child and it's always a hit. The combination of juicy poppy seeds, fruity cherries and creamy curd cheese is simply irresistible. The icing makes the cake particularly juicy and keeps it fresh for several days. An absolute favorite recipe that I would like to share with you! Enjoy!

Ingredients (17 ingredients)

  • 300 g Flour
  • 850 ml Milk
  • 1 tsp Sugar
  • 400 g Sugar
  • 21 g Fresh yeast
  • 250 g Butter
  • 6 piece Eggs (Size M)
  • to taste Salt
  • 50 g Durum wheat semolina
  • 100 g Poppy seeds
  • 50 g Chopped almonds
  • 75 g Raisins
  • 500 g Low-fat curd cheese
  • 700 g Sour cream
  • 2 Pck. Vanilla sugar
  • 2 packet Pudding powder
  • 350 g Cherries

Preparation (10 steps)

Prepare yeast

Thermomix® Setting
2 min/99°F/Speed 1 37

Put 125 ml milk and 1 tsp sugar into the mixing bowl and heat for 2 min./37°C/speed 1. Crumble fresh ½ cube (21 g) yeast into it and stir for 10 sec./speed 2.

Prepare dough

Thermomix® Setting
2 min/Kneading speed

Put 300 g flour, the yeast milk, 150 g melted (and cooled) butter, 100 g sugar, 1 egg and 1 pinch of salt into the mixing bowl and knead for 2 min./kneading setting to a smooth dough.

Let dough rise

Put the dough in a bowl, cover and let rise in a warm place for about 1 hour.

Prepare poppy seed mixture

5 min/212°F/Speed 2 100

Put 500 ml milk, 50 g butter and 50 g sugar into the mixing bowl and bring to the boil for 5 min./100°C/speed 2.

Let poppy seed mixture swell

Thermomix® Setting
5 min/194°F/Speed 1 90 Reverse

Stir in 50 g durum wheat semolina and 100 g poppy seeds and let swell for 5 min./90°C/speed 1 reverse rotation. Stir in 50 g chopped almonds and let cool.

Prepare curd cheese mixture

Thermomix® Setting
10 sec/Speed 2 Reverse

Put 50 g butter into the mixing bowl and melt for 2 min./50°C/speed 1. Add 500 g low-fat curd cheese, 200 g sour cream and 125 ml milk and stir for 20 sec./speed 3. Add 150 g sugar, 1 packet vanilla sugar, 1 egg and 2 packets pudding powder one after the other and stir for 20 sec./speed 3. Fold in 75 g washed and drained raisins and the melted butter and stir in for 10 sec./speed 2 reverse rotation.

Prepare sour cream topping

Thermomix® Setting
20 sec/Speed 3

Separate 4 eggs. Refrigerate egg whites. Put 500 g sour cream, 100 ml milk, 100 g sugar, 1 packet vanilla sugar and egg yolks into the mixing bowl and stir for 20 sec./speed 3.

Whisk egg whites

Thermomix® Setting
3 min/Speed 3.5

Put the set aside egg white with 1 pinch of salt into the mixing bowl, insert butterfly and whisk until stiff for 3 min./speed 3.5.

Finish topping

Carefully fold the egg whites into the sour cream topping.

Top and bake cake

Grease the baking sheet of the oven (inner dimensions 30 x 38 cm) and dust with flour. Roll out the dough in the baking sheet, press it up a little at the edge. Spread 350 g drained cherries on 1/3 of the base. Place the poppy seed mixture in the middle and smooth it out. Spread the cheese mixture on the last third. Carefully pour the topping over the cake and spread it out. Bake in a preheated oven (electric oven: 175 °C/ convection oven: 150 °C/ gas: level 2) on the lower rack for 40-50 minutes. Let cool on a wire rack.
