Description

These salmon cucumber bites are a real eye-catcher at any party! The combination of fresh cucumber, creamy cream cheese and tender smoked salmon is simply unbeatable. I especially like to make them in the summer when the cucumbers come from my own garden. The preparation is super easy and quick, so you have more time for your guests. If you like, you can mix a little horseradish into the cream cheese for a slightly spicy note. An absolute must for every brunch or as a small appetizer!

Ingredients (8 ingredients)

  • 1 piece small salad cucumber
  • 2 Stiele Dill
  • 150 g Double cream cheese
  • 0.5 piece Organic lemon (zest and juice)
  • Salt
  • Pepper
  • 200 g Smoked salmon (sliced)
  • 30 g Capers (jar)

Preparation (5 steps)

Prepare cucumber

Use a zester to peel a strip of peel from the small salad cucumber at regular intervals along its length to create a striped pattern. Cut the cucumber into slices approx. 1 cm thick and set aside.

Mix dill and cream cheese

Thermomix® Setting

Pluck the dill sprigs from the 2 sprigs of dill, except for a few for garnish, put them in the mixing bowl and chop for 3 seconds/speed 8. Push down with the spatula.

Prepare cream cheese cream

Thermomix® Setting
15 sec/Speed 3

Add 150 g double cream cheese, grated zest and juice of ½ organic lemon, salt and pepper to the chopped dill in the mixing bowl and stir for 15 seconds/speed 3.

Top cucumbers

Fill the cream cheese dill cream into a disposable piping bag with a large nozzle and pipe onto the cucumber slices.

Arrange and garnish salmon

Cut 200 g smoked salmon (sliced) into pieces, roll up and arrange on the cream cheese cream. Garnish with the remaining dill and 30 g capers (jar).
