Description

This beef braised with Asian flavours is a comforting and fragrant dish, perfect for autumn and winter evenings. I love preparing this dish because it fills the whole house with its exotic aromas. The meat, melting at will, is sublimated by the spices and the sweetness of the white wine. Cashews add a crunchy and gourmet touch. This dish is ideal for a friendly meal with family or friends. Do not hesitate to accompany it with basmati rice for a complete and tasty meal. A real delight!

Ingredients (20 ingredients)

  • 2 c à s flour
  • 1 c à c mustard
  • 0.5 piece lime juice
  • thyme and bay leaf
  • unsalted cashews
  • parsley
  • olive oil
  • salt
  • pepper
  • 0.5 c à c curry powder
  • 2 clous clove
  • 2 piece carrots
  • 30 cl broth
  • 50 cl white Burgundy wine
  • 1 piece large potato
  • 1 piece large red onion
  • 2 c à s red curry paste
  • 1 tige lemongrass
  • fresh ginger
  • 800 g beef to braise degreased as much as possible

Preparation (8 steps)

Preparation of vegetables and aromatics

Peel and coarsely chop the carrots and potato. Peel and cut the red onion in half. Peel and finely chop the ginger. Cut the lemongrass stalk into sections. Set aside.

Chop the red onion and ginger

Put the red onion cut in half and the chopped ginger in the Thermomix bowl. Chop for 3 Sek./Stufe 5.

Sauté the onion and ginger

Add the olive oil to the Thermomix bowl. Sauté the red onion and ginger for 3 Min./120°C/Stufe 1.

Adding spices and lime juice

Add the curry powder, cloves, lemongrass, lime juice, salt and pepper to the Thermomix bowl. Mix for 10 Sek./Stufe 3.

Adding meat and flour

Add the pieces of beef to the Thermomix bowl. Sprinkle with flour and mix gently with the spatula to coat the meat. Mix for 20 Sek./Linkslauf Stufe 2.

Cooking the beef

60 min/212°F/Linkslauf Speed 1 100 Reverse

Pour the white wine and broth into the Thermomix bowl. Add the red curry paste, mustard, thyme and bay leaf. Mix for 10 Sek./Stufe 3. Program 60 Min./100°C/Linkslauf Stufe 1.

Add the carrots and potato cut into pieces in the Thermomix bowl. Program 120 Min./95°C/Linkslauf Stufe 1.

Final preparation and service

Coarsely chop the cashews in the Thermomix for 3 Sek./Stufe 5. Serve the braised beef in a bowl, sprinkle with chopped cashews and fresh parsley.
