Description

With the Thermomix® these stuffed rice balls are a hearty finger food in Italian style. Risotto rice, Parmesan and minced meat form the basis for this party snack. Preparation takes about 90 minutes and yields 12 servings. Ideal as a starter, main course or for guests.

Ingredients (13 ingredients)

  • 250 g Risotto rice
  • 80 g Grated Parmesan
  • 2 EL Butter
  • 1 Stück Large onion
  • 500 g Mixed minced meat
  • 150 g Tomato sauce
  • 100 g Peas - frozen
  • 50 g Flour
  • 80 g Breadcrumbs
  • 1 Stück Egg
  • nach Geschmack Salt
  • nach Geschmack Pepper
  • Vegetable oil for frying

Cook rice

Thermomix® Setting

Put 250 g risotto rice into the simmering basket. Add 1 litre of water to the mixing bowl, insert the simmering basket and cook for 25 min./100°C/speed 1. Then transfer the rice and let it cool.

Prepare rice

Place cooked rice in a bowl. Add 80 g grated Parmesan and 2 tbsp butter. Season with salt and pepper and mix well. Set aside.

Chop onion

Put 1 large onion in the mixing bowl and chop for 3 sec./speed 5. Push down with the spatula.

Prepare minced meat filling

Remove chopped onions from the mixing bowl and set aside. Fry 500 g mixed minced meat in a pan with some vegetable oil. Add the chopped onions and sauté briefly. Stir in 150 g tomato sauce and 100 g frozen peas. Season with salt and pepper and simmer for 5 minutes. Then let it cool.

Form rice balls

With damp hands, form balls from the rice (approx. 60-70 g per ball). Press a hollow into each ball, add some of the minced meat filling and cover the hollow with rice. Form rice balls and press firmly. You should get about 12 rice balls.

Prepare breading station

Put 50 g flour and 80 g breadcrumbs each on a plate. Whisk 1 egg in a bowl and season with salt and pepper.

Bread arancini

First turn the formed arancini in flour, then in the whisked egg and then in breadcrumbs so that they are completely covered.

Fry arancini

Heat vegetable oil in a small saucepan to about 180 degrees. Fry the arancini in portions for approx. 3 minutes until golden brown. Remove with a slotted spoon and drain on kitchen paper.
