Description

This recipe for braised veal shoulder is a true feast! The tender veal, refined with aromatic herbs such as thyme and sage, is slowly braised in a delicious sauce of veal stock and white wine. I prefer to serve it with small, golden-brown roasted potatoes and blanched green beans. A dish that is perfect for special occasions and is guaranteed to delight every palate. The preparation in the Thermomix® makes it particularly easy and uncomplicated.

Ingredients (12 ingredients)

  • 2 kg Veal shoulder
  • 3 Zweig/e Thyme
  • 3 Zweig/e Sage
  • 4 tbsp Olive oil
  • Veal bones
  • 500 g Onion(s) small
  • 1 Glas Veal stock
  • 1 Glas White wine
  • 500 g Salt and pepper
  • 800 g Potato(es) small
  • Butter
  • Rosemary

Preparation (8 steps)

Chop onions

Peel 500 g onions, quarter and place in the mixing bowl. Chop for 3 sec./level 5. Push down with the spatula.

Sauté onions

Thermomix® Setting
3 min/248°F/Speed 1 120

Add 4 tbsp olive oil to the onions in the mixing bowl and sauté for 3 min./120°C/level 1.

Add veal stock and white wine

Add 1 glass of veal stock and 1 glass of white wine to the mixing bowl. Add veal bones.

Prepare veal shoulder

Salt and pepper 2 kg veal shoulder and tie together with 1 sprig of thyme and sage each.

Braise veal shoulder

Place the prepared veal shoulder in a roasting pan and sear on all sides in the hot oil. Add the onion-stock mixture from the Thermomix. Cover and simmer for approx. 70 minutes over low heat, turning regularly and basting with stock and white wine.

Prepare sauce

After braising, remove the roast from the pot. Pass the sauce through a sieve and return to the pot. Season to taste.

Cook potatoes

25 min/Varoma/Speed 1 Varoma

Peel 800 g small potatoes and place in the simmering basket. Fill 1 liter of water into the mixing bowl, insert the simmering basket and cook for 25 min./Varoma/level 1.

Prepare roasted potatoes

Remove the cooked potatoes from the simmering basket and fry in a pan with olive oil and rosemary until brown all over.
