Description

This bread recipe combines different types of flour such as wheat, spelt and rye for an aromatic and rustic bread. With easy preparation in the Thermomix® and a rising time of 2 hours, it is ideal for a hearty breakfast or as a side dish for dinner. The optional starter gives the bread a special touch. Suitable for anyone who likes to bake their own bread and loves the taste of fresh, homemade bread.

Ingredients (9 ingredients)

  • 480 g Water
  • 0.25 Würfe Yeast
  • 1 TL Honey
  • 250 g Wheat flour 405
  • 250 g Spelt flour 630
  • 100 g Rye flour 1150
  • 100 g Emmer flour
  • 2.5 TL Salt
  • 1 EL Starter

Preparation (4 steps)

Add water and yeast to the mixing bowl

Add 480 g water and 1/4 cube of yeast to the mixing bowl and heat for 2 min./37°C/speed 2.

Add honey, flours and salt

Add 1 tsp honey, 250 g wheat flour 405, 250 g spelt flour 630, 100 g rye flour 1150 and 2 1/2 tsp salt to the mixing bowl and knead for 3 min./kneading level.

Let the dough rise

Place the dough in a bowl and cover in a warm place for approx. 2 hours, until the volume has doubled.

Shape and bake the dough

Shape the dough into a loaf on a floured work surface and place on a baking sheet lined with baking paper. Optional: Knead in 1 tbsp of starter. Bake in a preheated oven at 220°C top/bottom heat for approx. 60 minutes.
