Description

This New Year pretzel is a traditional yeast pastry prepared with the Thermomix®. The dough is kneaded in the Thermomix® and then rises before being shaped into a pretzel and baked. Ideal for a festive breakfast or brunch on New Year's Eve. The recipe is of medium difficulty and yields one large pretzel.

Ingredients (12 ingredients)

  • 100 g Milk
  • 130 g Cream
  • 25 g Yeast
  • 100 g Sugar
  • 5 g Salt
  • 2 Stück Eggs
  • 80 g Soft butter
  • 650 g Flour
  • 1 Stück Egg
  • 1 EL Milk
  • Flaked almonds
  • Pearl sugar

Preparation (9 steps)

Heat ingredients

Place 100 g milk, 130 g cream, 25 g yeast, 100 g sugar, 5 g salt, 2 eggs and 80 g soft butter into the mixing bowl and heat for 3 min./37°C/speed 2.

Knead dough

Add 650 g flour to the remaining ingredients in the mixing bowl and knead for 5 min./dough setting.

Let the dough rise

Let the dough rise in the mixing bowl for about an hour until the volume has increased significantly.

Knead the dough again

Knead the dough again for 1 min./dough setting.

Shape the dough

Divide the dough into three equal parts on a dough mat and shape into strands about 1 m long. Braid the strands into a plait.

Shape the pretzel and let it rest

Shape the braided plait into a pretzel, place it on the magic stone and let it rest for about 30 minutes.

Preheat oven

Preheat the oven to 180°C top/bottom heat.

Brush and sprinkle the pretzel

Whisk 1 egg with 1-2 tbsp milk, brush the pretzel with it and sprinkle with flaked almonds or pearl sugar.

Bake pretzel

Bake the New Year pretzel for approx. 25 minutes until golden brown.
