Description

These soft brioches with a liquid core of hazelnut-nougat cream are simply irresistible! I especially like to make them on the weekend for a leisurely breakfast or a cozy brunch. Although the preparation is a bit time-consuming, the result is worth every minute. The dough becomes wonderfully smooth and airy in the Thermomix®. Filled with the creamy hazelnut-nougat surprise and garnished with crunchy hazelnuts, they are a real treat for young and old. An absolute highlight for all sweet tooths!

Ingredients (10 ingredients)

  • 200 ml lukewarm milk
  • 15 g brewer's yeast
  • 1 piece eggs
  • 80 g sunflower seed oil
  • 80 g sugar
  • 500 g flour (half 00 and half manitoba)
  • 0.5 g vanillin
  • 180 g hazelnut cream
  • 12 piece whole hazelnuts
  • icing sugar

Milk and yeast in the bowl

Pour 200 ml of lukewarm milk and 15 g of brewer's yeast into the bowl.

Addition of eggs, oil and sugar

Add 1 egg, 80 g of sunflower seed oil and 80 g of sugar into the bowl.

Addition of flour and vanillin

Add 500 g of flour (half 00 and half manitoba) and 0.5 g of vanillin into the bowl.

Dough rising

Transfer the dough to a lightly oiled bowl, cover with cling film and leave to rise in a warm place for about 2 hours, or until doubled in volume. This step does not take place in the Thermomix.

Forming the brioche

After rising, divide the dough into 12 equal portions. Roll out each portion into a disc, put 15 g of hazelnut cream in the center and close to form a ball. This step does not take place in the Thermomix.

Decorate and bake

Arrange the balls on a baking sheet lined with baking paper, decorate each brioche with a whole hazelnut and bake in a preheated oven at 180°C for about 15-20 minutes, or until golden brown. This step does not take place in the Thermomix.

Sprinkle with icing sugar

Once cooled, sprinkle the brioche with icing sugar before serving. This step does not take place in the Thermomix.
